I promised you chocolate so here you go sweet invisible internet friend of mine. Today I bring you chocolate but not just any ol’ chocolate, today I’m busting out my 5 Min, No Bake, Healthy Espresso Brownie Bites.

Do you guys remember those ah-mazing Blueberry and Dark Chocolate Energy Bites a few months ago? Well these are kinda like those but better(?) a little different because we left out the blueberries and added in some espresso. Oh yeah baby! I mean honestly, what’s not better with coffee? I know I am a much better woman girl wife mother person once I have had my morning coffee.

Chocolate and coffee all rolled into one delicious and healthy bite size bundle . . . ah-mazing!

I seriously can not stop eating these bad boys. Lucky they are so healthy and so easy to make, and re-make, and re-make. They are the perfect snack to get you through your afternoon 330itis, without the guilt or the post sugar crash.

They also make the perfect pre/post workout snack, get you all fuelled up and ready to work. Or kick the butt of that one massive guy  wearing his teeny tiny little footy shorts who sweats and lounges all over all the equipment your wanting to use, and doesn’t use a towel  because he has strategically placed it with his phone and keys in front of another piece of equipment (that you also would very much like to use) while he has lassoed himself to another machine with his trusty resistance band doing some kind of new and fancy stretch while he contorts himself into all kinds of weird positions just to see if anyone is watching. Ugh talk about annoying!

Sorry, rant over . . . back to the chocolate these Healthy, 5 min, No Bake, Espresso Brownie Bites are sweetened naturally with with dates, no added sugar here baby, they are packed with protein thanks to the raw almonds and also antioxidant rich due to the addition of a little dark chocolate and then you add the hit of espresso . . .

I cant even deal, so incredibly deeeeelicious!

And clearly they have super powers with all that goodness rolled into one little delicious bite.

So chocolatey, so delicious, so quick and easy to make, no baking required. They really are the perfect pick me up at anytime of day minus the work and the guilt.

Crack out your food processor, pulse, roll and enjoy my friend.

Healthy, 5 min, No Bake, Espresso Brownie Bites
Makes 35 deliciously intense bites of caffeinated chocolately goodness

Ingredients –

1 cup raw almonds

3/4 cup pitted dates, about 6 – I used medjool

4 Tablespoons of cocoa powder – I use Hershey’s Special Dark

1 heaping teaspoon of instant espresso

1 Tablespoon of dark chocolate chips

Method –

1 – Place almonds in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.

2 – Add dates and pules until the mixture starts to come together.

3 – Add chocolate chips, cocoa powder and espresso and pulse until combined.

4 – Using your hands, roll approx 1 Tbsp of mixture unto little rounds then transfer to your mouth an airtight container (or even just a ziplock bag) and store in the fridge or freezer until required ← that’s right, I said required. These bad boys are a need, not want people!
