Today kids for our test it out tuesday recipe we are talking avocado with the help of my long lost love, the one and only genius that is Jamie Oliver and his 15 minute meals cookbook. Well we’re not just talking avocados on their little lonesome, although they are pretty awesome – #justsayin’ Today my friends we are making guacamole!!!!!!

Sorry for yelling but this guacamole . . . deserves a shout out – HOLLA!

I know, I know avocados/guacamole is a risky thing to post about because it seems people are somewhat divided on the subject.. You either love em’ or you hate em’. Here in our house we stand firmly on team love! And if you are a hater and can’t get on board the winning team then Im afraid we can be friends anymore. Just kidding (←but not really ;)). But seriously if you are an avocado/guacamole hater don’t leave . . . or if you must . . . comeback thursday, there will be chocolate, promise xoxo

Simple ingredients, serious flavour oh how I ♥

But for now . . . we talk guac, because well sometimes a girl just needs some  . . . for lunch . . . the entire recipe . . . which is totally acceptable because avocados are packed with nutrients, vitamins, antioxidants and fibre. So it’s totally acceptable to eat the entire bowl for lunch, whats not acceptable I have just discovered is my saying the word “guac” . . . yeah . . . just can’t pull that off.

This guacamole though I can totally pull off, winning style, because all you have to do is pulse a few ingredients in your blender (or you could totally just mash them in a bowl with a fork if you wanted, get yourself a little arm workout at the same time . . . not a bad idea actually . . . ) and it’s time to get your guac on. Sorry just thought I would give the “guac” thing another try . . . Im not sure  . . . I think I might like it . . . thoughts?

Sorry . . . This guacamole is smooth, creamy, tangy and spicy and everything a good guacamole should be. Easy to eat . . . a little too easy. But remember, packed with healthy fats which we all need, loads of nutrients, vitamins, antioxidants and fibre rich . . . plus the basketball play offs have just started which means, chips and dip are totally required! Lets go nuggets!!!

Killer Guacamole
Slightly adapted and re-written in my own words from Jamie’s 15 minute meals Cookbook
Makes approx 1 heaping cup

Ingredients –

2 Tablespoons of fresh coriander

1/2 red chilli (more or less to taste)

2 spring onions, roughly chopped

1 ripe avocado

2-3 mini roma tomatoes

Juice of 1/2 a lime

Method –

1 – Place coriander, chilli and spring onions in a blender/food processor and pulse until fine.

2 – Slice avocado in half and remove the seed.

3 – Add avocado flesh to the food processor with the onion/chilli mix (discard the skins) then add tomatoes and lime juice and pulse until just combined.

4 – Season with salt and pepper and dive on in!
