So I don’t know whats going on but I can not think straight. I just can’t seem to get it together.

and Im . . . cranky . . . you know those days where you just kinda hate everything. Clothes, hair blah blah annoying?!

I just can’t seem to shake it.

I think maybe I need a vacation . . .

scratch that . . . I definitely need a vacation!

A few days ago I melted my kettle . . . today I somehow managed to not only drop a dozen eggs (a case? Carton?) at the store . . . I have no idea what happened. Seriously one second they were in my hand, the next thing I knew they were on the floor, as if that wasn’t bad enough I also managed to blow up my microwave . . . yep I think a vacation is definitely in order.

A big one . . . I’m thinking NYC for a mini makeover , clothes, hair, definitely shoes, shoes and more shoes and maybe a broadway show or 2  . . .and of course a few days in my beloved Denver . . . lots of Starbucks, lots of shopping at Super Target, Trader Joes, Whole Foods and of course eating my body weight in cool whip (←yes I know it’s not a real food but it’s my vacation, I do what I want yo ;)) and my fave animal crackers . . . lot’s of r & r is just what the doctor ordered . . . and when I say Doctor I mean me. You know what they say, mothers know best!

Ah if only I could just pack up and escape . . . in the mean time I will just kick back and have myself a mini mexican fiesta with this ah-mazing little mexican BLT slider. This weeks test it out tuesday recipe another of Jamie’s genius recipes from his incredible 15 minute meals cookbook.

Succulent, smokey and slightly spiced grilled chicken breast combine with bacon and avocado (or this killer guacamole)  . . . I have no words . . . just ah-mazing!

Mexican BLT Sliders
Slightly adapted and re-written in my own words from Jamie’s 15 minute meals cookbook
Makes 2 killer Sliders

Ingredients –

2 pieces of bacon (I prefer to use centre cut bacon)

1 skinless chicken breast, approx 180g

1/4 teaspoon of dried oregano

1/4 teaspoon of ground cumin

1/4 teaspoon of smoked paprika

salt and pepper to taste

2 slider/dinner rolls or 4 x slices of your fave bread

1 tomato, sliced

Avocado (or this killer guacamole)

Baby spinach/lettuce

Method –

1 – Add salt, pepper, oregano, cumin seeds and smoked paprika to  a small mortar and pestle and smash a couple of times just to crack open those beautoful cumin seeds and combine the spices.

2 – On a large sheet of baking paper, generously season both sides of your chicken with spice mix.

3 – Fold the over the edges of your parchment paper and give the chicken a good beating with a rolling pin (or even just the palm of your hand) to about 1 1/2 cm thick. This will help tenderise the chicken and also ensures even cooking time.

4 – In a medium fry pan/skillet on medium-high heat cook your bacon until golden, delicious and cooked to your liking. Set aside

5 – Add chicken to the pan and cook for 3-4 mins each side, until golden and cooked through.

6 – Toast your buns however you like, under the grill/broiler, in the toaster, whatevs

7 – While your buns are toasting, add bacon back into the pan with your chicken to re-warm/crisp it.

8 – To serve, spoon a generous heaping scoop of guacamole, top with bacon, then chicken, add a lice of tomato, sprinkle on a spinach leave or 2 and enjoy.
