Ok so remember a few weeks ago when I told you about my self imposed mission to find a good chocolate waffle recipe??

and I shared this wonderful recipe with you?

Well call me obsessive ……..or to put it more politely…. dedicated, although the previous recipe I shared with you for chocolate waffles was wonderful I wasn’t ready to give up. I do the research because I love you…..and waffles …. but you know that right??

Now this new recipe is more of a dessert waffle….save it for a special treat ….. once you’ve tucked the kids into bed….and your husband is on night shift….. when the house is quite…..so you don’t have to share. Or you could invite me over and I will join you …… gladly 🙂 I wont even say a word if you don’t want me to….I’ll just eat in silence…..these waffles are just that good.

Crunchy on the outside and so light and fluffy on the inside. Not to mention perfectly and deliciously chocolately….these waffles are what dreams are made of. Oh and eating them in your pjs ….. on the couch …. when the house is quiet……..bliss

Ingredients –
Recipe adapted from Our Best Bites
Makes 16 waffles

1/3 cup Cornflour
2/3 cup  Self Raising flour
1/4 cup Cocoa
4 Tbp brown sugar
1 tsp Baking powder
1 tsp Baking soda
1/8 tsp cinnamon
1/4 tsp salt flakes
1 cup Milk (I use skim)
1/3 cup apple sauce
1 egg
2 tsp Vanilla


Method –


Pour milk into a small bowl or jug.

Add egg,

then vanilla

stir to combine then set aside.

In a medium bowl sift cornflour, flour, cocoa, sugar, baking powder, baking soda, cinnamon and salt.

Add apple sauce

then pour in the milk mix

whisk until combined then set aside while you preheat your waffle iron.

Pour batter into waffle iron (I use about a 1/4 cup per waffle)

cook according to manufacturers instruction.

Don’t forget if your not serving your waffles fresh from the waffle iron, set them on a wire rack to cool so they don’t get soggy. Oh and FYI these waffles also freeze really well so you can store them in the freezer in case of future emergency….if they last that long that is.

Top with ice cream and fresh berry syrup

and dig in….

then watch your trouble just….

disappear…..delicious!!!!!!!!!!
