So I think by now its pretty clear that I totally ♥ waffles.

Chocolate waffles, anytime waffles, protein waffles, cobbler waffles, chocolate waffles again, banana bread waffles . . . ♥♥♥

And now let me introduce you to my latest love . . . Blueberry Yoghurt Waffles

As soon as I spied these waffles over at Two Peas and Their Pod I knew I had to make them. ASAP!

These waffles . . . ohmyword these waffles!!!!

Are they breakfast? Are they dessert?

yes.

They are super light, subtly sweet, packed with blueberries. Perfect for any time of day 🙂

When I was inhaling eating these, totally healthy style for breakfast – with an extra dollop of greek yoghurt, a little blueberry maple syrup and a couple of strawberries on top it kinda felt like I was eating blueberry pie . . . so I decided to go hobbit style . . . bring on second breakfast yo!

Enter vanilla ice cream, crumbled cookie, more blueberry maple syrup and super juicy strawberry . . . for extra antioxidants you know 😉

Blueberry Yoghurt Waffles
Slightly adapted from this recipe from Two Peas and their Pod
Makes approx 12 waffles

Ingredients –

1 cup plain flour {wholewheat pastry flour would work too)
1 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
2 Tbsp sugar
1/4 tsp salt flakes
1/2 cup plain Greek yogurt (I use 0% Chobani)
3/4 cup milk (I use skim)
1 egg
1 teaspoon vanilla extract
1 cup blueberries (I used frozen, If you do the same don’t thaw before use)

Optional for serving –

Greek Yoghurt (I use Chobani 0%)
Maple Syrup
Strawberries
Ice cream
Cookies, crumbled (I use Arnotts Milk Arrowroot)

Method –

Preheat your waffle iron.

Into a medium size bowl, sift flour, baking powder, baking soda, cinnamon, sugar and salt flakes.

Pour in milk,

add yoghurt,

egg,

and vanilla

then stir to combine.

Add blueberries

and stir until just combine.

Pour batter into hot waffle iron (I use 1/4 cup measure)

and cook according to manufacturers instructions.

Transfer to a wire rack if not devouring eating immediately so they don’t go soggy.

Top with a dollop of yoghurt,

a good drizzle of maple syrup (I used blueberry)

and top with a deliciously juicy, super ripe strawberry.

Healthy breakfast sorted 🙂

Top with a scoop of ice cream,

a good drizzle of maple syrup (again I used blueberry),

crumble a cookie

and finish with a delicious, ruby red strawberry . . . blueberry pie waffles for second breakfast dessert . . .
