Remember last week when I should have been packing and just could not seem to get motivated to do it? Well I decided to delay the inevitable in the best way possible.

Baking!

Well I had to have something delicious to share with my sweet invisible internet friends for test it out tuesday right?

This week we are baking some outrageously delicious Vanilla spiked choc chip mini muffins.

But not just any mini muffins, these babies are vegan, flourless/grain free and if you choose the right choc chips they could be paleo friendly! They are also sweetened simply with a splash of vanilla and a drizzle of maple syrup which also makes them refined sugar free not to mention insanely delicious!

Like in-sane!

You would never know they aren’t loaded with refined sugars, mountains of butter or even a humble egg.

I honestly could not believe how good they were.

They are dangerously addictive.

You would never know how incredibly healthy they are.

So light and fluffy, so moist (←sorry) they really do just melt in your mouth.

These mini muffins have a wonderful vanilla flavour which just goes so perfectly with the slight nuttiness of the almond flour. They are packed full of delicious mini choc chips and the addition of the chia seeds provides the occasional crunch that texture freaks like me just love!

I have to give a big shout out, huge thanks and many showers of happy dancing praise to Katie of Chocolate covered Katie for sharing the original version of this recipe.

Although I am not vegan myself nor do I have any dietary restrictions or limitations to contend with personally I have to say these vanilla spiked choc chip chia mini muffins have got to be some of the best I have tasted in a looooonnnggggggg time. And I love that I have another killer recipe to share with my vegan, grain free (flourless) loving friends and fam.

Everyone in my house absolutely adored them.

Simple healthy vanilla spiked, choc chip mini muffins made from scratch, ready in 20 mins.

Packed with protein thanks to the almond flour, antioxidant rich with the addition of dark choc chips, then you have the fibre rich goodness along with all those all important omega 3’s and countless essential vitamins and minerals that those crunchy little chia seeds provide – I mean these mini muffins are a need not a want – obviously for the sake of your health and all. Plus they are mini which just means you can eat more right?!

Right.

These sweet little vanilla spiked, choc chip mini muffins are perfect anytime of day.

Good for the body and for the soul.

Make them, eat them, love them.

Vegan Flourless Vanilla Spiked Choc Chip Chia Mini Muffins
Slightly adapted from this recipe shared by the wonderful Katie of Chocolate Covered Katie
Makes appox 17 soft and crumble, chialicious, choc chip mini muffins

Ingredients –

1 cup of almond meal

1 Tablespoon of Chia seeds

1/4 teaspoon of baking soda

a pinch of salt

1 teaspoon of vanilla extract

1 teaspoon of coconut oil, melted and cooled

2 Tablespoons of maple syrup

2 teaspoons of apple cider vinegar

1/4 cup of water

2 Tablespoons of your fave choc chips roughly chopped

Method –

1 – Preheat oven to 175’C (350’F)

2 – If using, line a mini muffin tray with paper cases alternately lightly oil your mini muffins tray and set aside.

3 – In a medium bowl combine almond meal, chia seeds, baking soda and salt and stir to combine. Set aside.

4 – In a small bowl or jug combine vanilla extract, coconut oil, maple syrup, water and apple cider vinegar and stir to combine.

5 – Pour vanilla/maple syrup/water mix into your chia almond meal mix and stir to combine.

6 – Add your choc chips and stir until almost combine.

7 – Spoon the batter into your prepared mini muffins tray (I used a Tablespoon for each mini muffin) and bake for 12-15 mins until the tops are slightly golden and a toothpick has just a few crumbs attached when inserted into the centre.

8 – Allow to cool in the mini muffin tray for 10 mins before immediately inhaling politely taste testing a mini muffin or 2 with a big ol’ glass of ice cold milk
