Weekend!

I can’t even tell you.

I slipped and fell down our stairs (oh my aching back!) , I was up every hour, on the hour with our poor sick “baby” who despite being seriously down for the count simply refuses to rest so she can conserve her precious energy and recover (energiser bunny say wwhhaaaatt?!)

Not to mention that my beloved waffle maker died (wwaaaaaaaahhhh) Oh and I also spilled half a bottle of rainbow sprinkles which is seriously so very annoying. Not only because I wasted a bunch of sprinkles either. Have you ever spilled a jar of sprinkles? Such a nightmare to clean up!

You try to sweep them and they just keep ping ponging and bouncing all over the place. I know I’m going to be finding random little sprinkles all over the place for weeks month years to come. And this happens more than it should (clumsy lady say wwwwhhhhaaaattt!!) so if you have any tips on how to clean up sprinkles feel free to shout out in the comments below.

So . . . sick “baby” + seriously stiff, sore aching back + the fact that I have a freezer full of manky, over ripe bananas that were sadly neglected over the holidays can mean only one thing . . .  This weeks test it out tuesday recipe is . . . wait for it . . .

Smoothies!!!!

This recipe is one that I have adapted from the ah-mazing cookbook (A Year of Holidays)  by the one and only ever incredible, insanely talented (both in the kitchen and behind the camera) always hilarious Ree AKA – P-Diddy-Dub – AKA – The Pioneer Woman (much, much respect for this beautiful, wonderful, woman).

This smoothie is all natural, thick, creamy, smooth sweet and packed with vitamins and nutrients. Just what this accident prone mama and her poor sick little lady needed. No chewing required!

This recipe makes 2 very large, seriously delicious, totally filling and all kinds of satisfying tropical smoothies.

When I was making this smoothie I wondered about the addition of carrots, yes baby carrots do tend to be a little on the sweeter side as far as veg goes but I was sure I would be able to taste them. Not sure how I would taste them but I was expecting some sort of . . . evidence, a little after taste . . . something, anything but you know what. I got nothing.

This smoothie is nothing short of incredible. It’s thick and creamy , light and refreshing and perfectly but not overly sweet.

The natural sweetness of the mango, peach, carrot and pineapple blended with just a splash of 100% pure apple juice and 1/2 a frozen banana is nothing short of perfection.

Perfect for breakfast on the go.

Perfect for a pre/post workout pick me up.

Perfect for lunch, no pesky chewing required.

Perfect post dinner sweet treat on these hot, humid Sydney summer nights.

And perfect for poor sick little girls who can’t eat much of anything because their poor, sweet little noses are all blocked up and “has fire burning in it”

Tropical Smoothie
AKA Ree’s Orange Smoothie. Re-written in my own words and adapted from The Pioneer Woman Cooks – A Year of Holidays
Makes 1 large or 2 small, creamy, dreamy healthy tropical smoothies

Ingredients –

1/3 cup Greek yoghurt

1/2 cup frozen mango pieces

1/2 cup of frozen peaches

1/4 cup of frozen pineapple pieces

1/4 cup frozen baby carrots

1/2 an overripe banana (preferably pre-frozen)

1/4 cup apple juice

1/2-1 cup water (or milk of choice) more or less depending on how thick you like your smoothies

1/2 cup of ice (optional – I didn’t add any ice, it was ice cold and thick and creamy enough just using the frozen fruit. If you use fresh fruit I suggest you add the ice. I would anyway but thats just me. Do what you feel :))

Method –

1 – Place all ingredients into a blender and process until smooth and creamy.

2 – To serve, pour directly into your mouth into a chilled glass of mason jar skull, skull, skull and garnish with a mint leaf or 2 if your feeling fancy.
