Sometimes a girl just needs a vegetable or 2.
Despite what some people may think I don’t live on cake, waffles, donuts, cupcakes, peanut butter cups alone.
I like to live by the 80/20 rule.
80% cake, cupcakes, waffles and other baked morsels of deliciousness balanced out by 20% vegetables . . . thats right isn’t it? The 80/20 thing?
Of course it is 😉
So, continuing on with my peanut butter lovin’ I bring you one of our all time have veg dishes.
We honestly eat this once a week, lunch or dinner whateves. Its so simple, so delicious and all kinds of healthy.
Don’t let that put you off, you will love it I promise.
Feel free to add any kind of protein, chicken, beef, tofu . . . it’s all good although totally not necessary.
This stir fry is the bomb.
Make it, eat it, love it.

Stir Fry Vegetables with Hokkein Noodles in Peanut Sauce
Serves 4+Ingredients –
Hookein Noodles (I used fantastic)
2 cups mixed vegetables (I used broccoli, green and red capsicum, mushroom), cut to uniform sizes
3 eggs
For the sauce –
1/4 cup peanut butter (Homemade or store bought is fine)
1/8 cup soy sauce
1 Tbsp sugar
2 garlic cloves, crushed
1 Tbsp rice vinegar
1 Tbsp sesame seeds
1/4 tsp flakes (more or less to taste)
2 Shallots (spring/green onions), thinly sliced
Method –
Prepare noodles according to package instructions.
To prepare the sauce, combine all ingredients and whisk until well combined. Set aside.
In a wok (or fry pan) over medium-high heat cook your vegetables until slightly tender. You want them to still have a little crunch to them, when I say you I mean me . . . I just assume great minds think alike 😉
Remove vegetables to bowl and set aside.
Add eggs to the wok and cook as you would scrambled eggs.
Once your eggs are nice and scrambled add cooked veg and noodles followed by dressing and cook until the sauce is heated through.
Serve with a few extra shallots and some crushed peanuts
