Yes I’m totally going to be one of those people and talk about the weather.

Seriously people what is going on?

Is it summer?

Is it winter?

Is it spring time?

Ugh get it together seasons puh-lease all this indecisiveness is k-i-l-l-i-n-g me! Ok so maybe not literally but c’mon people don’t tell me its not annoying?

It really is, you and I both know it.

We just did groceries and it was like 100′ (←we all know how I never exaggerate right ;)) so when I was picking bananas I made sure to get some that were a leetle greener than I like, as you do. However . . . crazy 100′ weather continued . . . even my green bananas didn’t stand a chance. Over-ripe in the blink of an eye!

And then . . . snap . . . fuh-reezing cold and pouring rain.

ugh!

Luckily I had this awesome book to read.

Extra lucky that Jenna had included a killer banana bread recipe in said book. Perfect for me to snuggle up in my jimmy jams with a nice cup of green tea and a big ol’ chunk of fresh, deeelicious (and seriously healthy) banana bread to survive the pouring rain.

Boomshakalocka!

There is something so comforting about mashing a manky old banana and stirring it with some sweet, fragrant brown sugar . . . oh how I love it!

So just incase you missed it in amongst all my mindless rambling this week our test it out Tuesday recipe is from White Jacket Required written by non other than our girl Jenna Weber who blogs over at Eat, Live, Run. If you haven’t “met” Jenna yet you really need to.

She is ah-mazing! Such a sweet girl, wonderful writer, incredible chef and just a sweet sweet little lady. I just love her.

Now, I love reading but don’t do it very often (magazines and cookbooks don’t really count do they?). In school I was one of those kids who, although I loved english, was a bit of a slow reader so . . . long story short . . . if there was a video of required reading . . . yeah I totally watched the video instead.

Did I really just tell you that?

hmmm, anyway this book is so well written – really. I read it in 2 sittings, which is HUGE for me! It was like I was sitting eating banana bread, drinking tea and just catching up with a good friend.

I really just loved it. I think you will too, you should totally read it. You’ll laugh, you’ll cry and see the most beautiful love story take shape. At least promise me one thing . . . that you’ll make this banana bread. You’ll laugh, you’ll cry and see the most beautiful love story take shape . . . only this time it will be in your mouth . . .

I have very slightly modified Jenna’s recipe only to fit the ingredients I had on hand . . . did I mention that I was confined to my apart thanks to freezing cold and pouring rain?

I should tell you this bread is a little heavier and slightly more dense than your standard banana bread but it is so, so good. I couldn’t believe just how good it was to be honest. Bananas, brown sugar and cinnamon = winning combination. You totally need to make this asap!

Oh Jenna thank you for sharing your story and so many wonderful recipes. You, girlfriend are incredible!

Jenna’s Banana Bread
Recipe slightly Adapted from White Jacket Required
Makes 1 loaf (approx 16 slices)

Ingredients –

3 Large ripe bananas

1/2 cup brown sugar

1/4 cup greek yoghurt (I use Chobani 0%)

2 cups whole wheat pastry flour (I use Bob’s Red Mill)

1 teaspoon baking powder

1 1/2 teaspoons cinnamon

1 teaspoon salt flakes

Method –

Preheat oven to 175’C (350’F)

Peel bananas and place them in a medium size bowl.

Give them a good mashing.

Add brown sugar and yoghurt and stir to combine.

Sift flour, baking powder, cinnamon and salt into the banana mix then stir until just combines.

Pour batter into prepared loaf pan and bake for 30-40 mins until golden brown (and smelling incredible!!!!)

Allow to cool in the pan for 15 mins before transferring to a wire rack to be sliced and devoured immediately finishing cooling.

PS – try it toasted with a dollop of greek yoghurt and a big ol’ spoonful of strawberry jam along side a giant cup of coffee . . . best. breakfast. ever!
