Last week I told you how much I love, love, love cake!

Like seriously!

I also told you how my sweet little nephew shared his birthday with his grandma . . . my mama . . . no cake sharing allowed so this week I bring you the mother of all cakes.

You know because it’s for my mama. Boy did I break out the big guns!

Last year we celebrated with these super cute and really tasty mini cherry cheesecakes – what can I tell you, my mama loves a good cheesecake. Who doesn’t, am I right?? If course I am 😉

Now what goes with cheesecake?

Coffee!!!!!

We all know that coffee and cheesecake go together like bacon and eggs, peanut butter and jelly, vegemite and toast, cookies and cream, me and cake! Its a match made in heaven. Can I get an Amen (yes really)?

Amen!

This year I wanted to bring my her 2 great loves together in one ah-mazing birthday treat.

Enter Amazing Coffee Cake with Whipped Vanilla Cheesecake Frosting.

This cake is incredible!

Seriously!

If your not a fan of coffee please, please, please still give this cake a chance.

It has a subtle coffee flavour with a kind of caramel hint to it. I have no idea how or where it gets its sweet, subtle, caramel dreaminess from but I like it.

I like it so much I may have (← read absolutely could not stop myself) cut a few extra slivers of cake  and eaten them right of the platter after the initial tasting, you know just to try and figure out the flavours and where that dreamy caramel undertone was coming from. You know I do it because I love you right? Just taking one for the team.

And everybody knows that slivers of cake eaten straight from the serving platter don’t count towards your daily calorie intake right? Totally true. Just like eating the ice cream straight out of the container doesn’t count, or cereal straight from the box? Totally calorie free. Am I right or am I right?

Amazing Coffee Cake with Whipped Vanilla Cheesecake Frosting
This recipe slightly adapted and re-written from The Pioneer Woman Cooks – Food from my Frontier
Serves 10+

Ingredients

For the Cake –

1/3 cup butter

1 Tablespoon (heaping) of instant coffee granules

1/3 cup boiling water

2/3 cup plain flour

1/2 cup sugar

1/8 teaspoon salt flakes

3 Tablespoons milk (I use skim)

1 egg

1/2 teaspoon baking soda

1 teaspoon vanilla extract

For the Frosting –
This recipe from Dashing Dish

1 box instant  pudding mix (I used cheesecake)

8oz whipped cream or cool whip/dream whip

1 cup  milk (I used skim)

Sprinkles (Optional)

Method –

Preheat oven to 175’C (350’F)

To make the cake, in a small saucepan over low heat melt the butter.

Sprinkle in the instant coffee . . .

Add the boiling water.

Let the mix bubble for  few seconds then turn off the heat.

Sift the flour, sugar and salt into a medium size bowl then pour in the hot butter/coffee mixture and stir to combine.

In a small bowl or jug mix milk, eggs, vanilla and baking soda then pour it into the bowl with the rest of the batter.

Pour the batter evenly into prepared baking pans (I used 2 x 6 inch) and bake for 13-15 mins or until set. Remove the pans from the oven and allow the cakes to cool inside the pans for 10 mins then invert onto a wire rack to cool completely.

For the frosting

In a medium bowl pour milk . . .

add pudding mix and whisk using an electric mixer until smooth (about 1 min is all it takes :))

Add in your whipped cream/cool whip and carefully fold until well combined.

Cover and refrigerate until your ready to assemble your cake.

To assemble your cake – Place on cake layer on a plate/cake stand and top with 1/3 of the frosting spreading to the edges then place remaining cake layer on top and gently press down a little. Its ok if some frosting smooshes out the sides, use this as your base coat of frosting, the crumb coat.

Dollop 1/3 of the frosting on the top and spread it around, using the final 1/3 of the frosting to frost the sides of your cake.

Finally finish with sprinkles, because sprinkles make everything better 🙂

Slice and serve to someone you love, or grab a fork and go. to. town 🙂
