So, Ive noticed there are a lllooottttt of people who have a striking resemblence to their pets.

Yes really. I know, I know I’m such a dork. That’s why you love me right?

chocolate.

because we all know chocolate makes everything better. Oh come on this time you know I’m right 🙂

Especially when it’s dark chocolate which means it’s totally healthy, like basically makes it negative calories or something.

When you mix it with some sweet pumpkin, cinnamon and a few other essentials you have yourself a winner.

A secretly healthy, absolutely deeeelllllicious winner.

These blondies are so simple to make, seriously you just mix everything up in one bowl then whack them in the oven for 15 mins and boomshackalock

If you’ve never had a blondie before they are kinda like brownies but minus the cocoa.

This recipe is one I found on one of my daily stalkings visits over at Lauren’s Latest. Have you guys met Lauren? If not you totally need to. Girlfriend is ah-mazing.  Incredible recipes – yes. Entertaining – yes. Wonderful photography – oh yes

Oh and for those of you freaking out about the pumpkin in your dessert . . . weird I know it may seem that way . . . but sneaking a vegetable into your dessert . . . I promise you won’t even taste it. Promise . . .

Spunky husband can not stand pumpkin, loathes it . . . or so he thinks . . . Let’s just say these babies only lasted 2 days in our house . . . and there are only 3 of us . . .

True story

Make them, eat them, love them.

You know you want to . . . antioxidant from the dark chocolate . . . essential vitamins and minerals from the pumpkin . . . totally acceptable to eat the entire pan in 2 days . . . gotta get your 5 a day right 😉

Pumpkin, Spice and Dark Chocolate Chip Blondies
Very slightly  adapted from this ah-mazing recipe from Lauren’s Latest
Makes 15 beautiful bite size blondies

Ingredients –

1 egg

1/2 cup pumpkin puree

1/2 cup plain greek yoghurt (I use Chobani 0%)

2 teaspoon vanilla

1/3 cup packed brown sugar

3/4 cup plain flour

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking soda

1/4 teaspoon salt flakes

6 Tablespoons dark chocolate chips, roughly chopped

Method –

Preheat oven to 175’C (350’F)

Line a 9 x 13 inch rimmed baking dish with parchment/baking paper and set aside.

In a medium size bowl combine all ingredients except the chocolate chips and whisk until just combined.

Add chocolate chips and fold through the batter. Do not over mix.

Pour batter into your prepared baking pan and bake for 12-15 mins, until golden and springs back when lightly pressed or a just few crumbs remain when a tooth pick is inserted into the centre.

Allow to cool in the pan on a wire rack.

Grab a fork slice and enjoy.

So, so good!
