Sometimes you just need a big lo’ serving of chocolate?

And when its this simple to make, super healthy and all kinds of delicious why not?!

Rich, smooth and seriously creamy, intensely chocolatey instant pudding, with only 5 ingredients (plus a pinch of salt),  ready in minutes . . . and it’s incredibly healthy . . . like seriously . . . totally guilt free. Sorry about the run on sentence . . . when I get excited sometimes I forget to breathe . . . its kind of a problem

This week our test it out tuesday recipe may be testing our friendship for some of you . . . do you trust me?

You totally do . . . so let’s do this.

Wanna know the secret . . . avocado my friend. Our seriously healthy, devilishly decadent chocolate indulgence is made with avocado.

Honestly, I couldn’t even taste it. And I was trying really, really hard to taste it . . . but all I got was silky smooth, super creamy chocolatey goodness.

Winning!

Although I wanted to be sure there was no avocado evidence so I did what any normal, loving, generous, wonderful person would do . . . I secretly fed some to an avocado hater.

Like big time hater.

Mention the word avocado in the company of said person and they shudder.

Cah-razy person.

You know what . . . they loved it!

Like licked the bowl clean loved it!

Ah I love to feed people food they think they hate only to have them absolutely love it (evidence here) . . . mwahahaha

So dust off your food processor, or blender, or hand held mixer and go make yourself some silky smooth, super creamy, incredibly rich, intensely chocolatey but super healthy chocolate pudding.

You know you want too

Healthy Homemade Instant Chocolate Pudding
Makes approx 2 cups of seriously healthy, seriously chocolatey instant pudding

 

Ingredients –

1 avocado (I used hass)

2 Tablespoons of cocoa powder

1 Tablespoon of Maple syrup (the real stuff!)

2 teaspoons of vanilla extract

2-4 sachets of stevia (more or less to taste depending on how sweet you like it)

a pinch of salt flakes

Optional but recommended for serving –

Sprinkles!!!!!!!!

Method –

1 – Slice your avocado in half and remove the pit.

2 – Scoop out the flesh and place into your blender/food processor Of you dont have a food processor or blender you could just use your stand/hand held mixer)

3 – Blend/pulse/whisk until smooth

4 – Add cocoa powder, maple syrup, vanilla, stevia and salt flakes and blend/pulse/whisk again until smooth, glossy and well combined.

5 – Taste and add extra maple syrup/stevia accordingly.

6 – Dive head first into the heavenly healthy chocolatey goodness Spoon into bowls and enjoy.

Note – You can also spoon the mix into a ziplock bag and snip off a corner to pipe into cute little cups which is what I did.

Also You can store in a sealed, air tight container for 24-48 hours . . . if it lasts that long
