You guys I am so excited about this weeks test it out tuesday recipe! As soon as I saw the original recipe that Averie had posted last week over on her incredible blog, Averie Cooks I knew I had to make it asap!

Umm hello peanut butter and chocolate mini muffins, want. Need. Must have, like 5 mins ago!

Oh and you guys I have to tell you, I am feeling soooooo much better!

Still not 100% but those moments that had me feeling like I have been punched in the face a million times are wayyyyy less frequent!

Celebrate with me?

Come on, you know you wanna?!

We can do it by making some adorable little mini muffins.

Not just any mini muffins, how about we make some peanut butter, banana and choc chip mini muffins.

Just incase you need any more convincing here are a few reasons why I had to make these muffins asap –

1 – I always, always have at least five one manky over ripe bananas laying around on my kitchen counter waiting to be shown whose boss used

2 – These adorable little PB, Banana, Choc Chip mini muffins are flourless, I was intrigued, muffins you make with little more than peanut butter, banana, egg and a few choc chips. Seriously? Ugh and why does my auto correct always change “choc” to chic – annoying!!!!

Ok so flourless mini muffins means these bad boys are grain free my friend which means that even though sweet sister of mine isn’t actually here for me to need to cater to her special dietary requirements I could totally share this recipe with her . . . I love that! I may or may not have totally eaten like 6 of these on her behalf. Totally taking one for the team, I’m good like that.

3 – I recently learned that November is National Peanut Butter Month! Yes really, it’s like totally a thing, did you know? I had no idea but Laurie said it so it must be true.

4 – I just got my hands on a fresh jar of chocolate PB2 which I was just dying to crack into and making these mini muffins would provide the perfect excuse. Not that I really need an excuse to bust into a jar of chocolate peanut butter (←um hello chocolate peanut butter – totally necessary all of the time no excuse necessary) but hey, whatever you have to tell yourself to get these mini muffins baking already right?!

Right! So let’s make some mini muffins already!

Oh wait, I forget to mention we make these muffins by simply throwing a few ingredients into a blender, stirring through some choc chips then we bake and boomshakalocka, done! Freshly baked, flourless peanut butter, banana, choc chip mini muffins made from scratch, start to finish ready in less than 20 mins. Yes please!

You guys . . . these muffins . . . out-rage-ous!

So chocolately.

So fudgey.

So insanely delicious and dangerously easy to eat, it’s lucky they also happen to be all kinds of healthy.

They are a slightly different texture than your regular run of the mill mini muffin because they are made with no flour and all. Think more fudgey, less cakey.

Sweetened simply with banana, maple syrup and vanilla extract so there are also no refined sugars added. These super moist (←sorry) mini muffins are not only super fudgey, intensely chocolaty and all kinds of delicious, they are also all natural baby.

When Averie mentioned that although these muffins are sweetened with banana you couldn’t tell I gotta be honest, I didn’t really believe her. Surely there would be a lingering, residual banana flavoured aftertaste. Something. Anything. But you know what . . . I got nothin’.

My little lady didn’t notice, spunky husband didn’t pick it. All we got was chocolate, peanut butter goodness. Not that it would be a bad thing to taste the banana. I love banana and of course banana, PB and chocolate is always a winning combination but I just thought you should know.

Averie was totally right. You would never know there was banana in there so if you have any banana haters in your house, totally feed them these. They will never know mwahahahaha. Sorry, you know how much I love to sneakily feed people food they think they hate. I have issue I know. We all have our things right?!

These mini muffins are also packed with protein from the egg and peanut butter, or chocolate PB2 in my case,  oh and let’s not forget all those delicious little antioxidants from the dark chocolate chips – umm hello, winning!!!!

You need these in your life! And when you follow the recipe I share below these delicious little mini muffins clock in at a measly 33 calories a piece.

Super fudgey, insanely chocolatey, peanut butter flavoured mini muffins that are all natural, packed with protein and studded with delicious little bites of antioxidant rich dark chocolate chips at a minuscule 33 calories a piece, what are you waiting for?!

Flourless Peanut Butter Banana Choc Chip Mini Muffins
Slightly adapted from this recipe shared by the incredible Averie of Averie Cooks
Makes 24 mini muffins

Ingredients –

I medium size over ripe banana

1 egg

1/2 cup (8 Tablespoons) of Chocolate PB2, mixed with 6 Tablespoons of water (can sub for 1/2 cup of your fave peanut butter)

2 teaspoons of vanilla extract

3 Tablespoons of maple syrup

1 teaspoon of coconut oil, melted and cooled.

1/4 teaspoon of baking soda

pinch of salt flakes

3 Tablespoons of dark chocolate chips, roughly chopped.

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Prepare your mini muffin tray either buy lightly greasing the tray or lining with pale cases . . . I would have lined with paper cases but I was all out.

3 – Place all ingredients except for your chocolate chips into a blender or food processor and blend/process until smooth.

4 – Stir in 3/4 of your chocolate chips and spoon batter into your prepared mini muffin tray and sprinkle with remaining chocolate chips.

5 – Bake for 8-10 mins until the tops spring back when lightly pressed and a tooth pick has just a few crumbs attached when inserted into the centre.

6 – Allow to cool in the tray for 5-10 mins before transferring to a wire rack to cool completely . . . if you can wait that long 😉
