Like really, really.
I eat them in one form or another every. single. day.
It just never gets old.
Ever.
Did you know that Avocados are high in monounsaturated fat (which is the good kind) It has been proven to help lower LDL aka “bad” cholesterol and increase your HDH aka “good cholesterol. Also this monounsaturated fat found in our beloved avocado has been linked to a decreased risk of diabetes and cancer. Avocados also contain an antioxidant (lutein) which helps to maintain and boost eye and skin health. Seriously ♥
Something else I eat every day is some kind of salad. I just love it. Ugh boring I hear you say?! Oh on the contrary sweet, wonderful, invisible internet friend of mine. The possibilities are endless. Endless I tell you endless!!!!!!!!!
Although I love me a good salad I’m not a big fan of dressings . . . you know they can be crazy sweet, or overly oily and make your crispy, crunchy, fresh and deliciously satisfying salad all limp, lifeless and totally unenjoyable. Kinda like this weather we have going on in sydney right now. What’s going on winter?! We used to be friends?!
I don’t usually like dressing I should say, but this Creamy Avocado Chilli Lime and Yoghurt Dressing is like no dressing I have ever had before. It’s slightly tart thanks to the greek yoghurt with a nice little tang from of mr lime and at the same time has a nice little kick to it from the chilli. It’s the perfect way to dress up a “boring old salad” which was exactly what I needed . . . at the end of the week when I was almost out of groceries. With the awful, wet and windy weather we are having . . . there was no way I was going out into that madness for anything. This dressing saved my salad!
4 ingredients, a minute in the blender and you have yourself one seriously healthy, zippy, zesty, tart, tangy, smooth and creamy life saving salad dressing! Oh but it’s really so much more than your regular run of the mill salad dressing. Think outside the square here people, dip your corn chips in it, slather it on this burger, or drizzle over these tacos, bathe in it . . . well maybe don’t bathe in it, you may very well want though to it’s just that good! But chilli and bathing – not a good combination. #justsayin
So, avocados everyday . . . you should totally join me. They are seriously good for you. Packed with fibre and all kinds of delicious vitamins, and minerals.

Creamy Avocado Chili Lime and Yogurt Dressing
Slightly adapted and re-written in my own words from Jamie’s 15 minute meals cookbook
Makes about 1 cup of tart, tangy, spicy and seriously creamy delicious goodnessIngredients –
1 avocado
1/4 cup of Greek yogurt (I use Chobani ♥)
1 chili, finely chopped
Juice of 1 lime
Salt and Pepper to taste
Method –
1 – In a blender or food processor place all ingredients and blend/process until smooth and creamy. Add a dash or milk, water or neutralish flavoured oil (olive/coconut) to reach your desired consistency.
2 – Dollop over your fave salad, scoop mountainous delicious mouthfuls a top crispy crunchy corn chips . . . grab a spoon and dig in . . .

I love this recipe because its really heart healthy and my husband recently had a heart attack..to much red meat plus the many other things he liked to eat and drink that werent good for him. So now im looking at everything…just one thing you might want to remove and thats coconut oil, its really bad for you because its got 92% saturated fats..olive oil/sesame seed oil really good for you but coconut oil really bad. I am going to use this recipe tomorrow with chilli crab cakes and sweet potato oven cooked chunks and salad and i cant wait to try it out!
