No bake {date free} black forest bounty bars!

The sneaky snack you never knew you always needed!

Super fudgy, no-bake (date free & packed with protein!!) rich chocolate brownie topped with chewy cherry coconut finished with a cool crisp layer of espresso-infused dark chocolate!

And yes, for those who aren’t into coffee, you can absolutely leave it out, but that being said, my dear ol’ dad who hates coffee had and absolutely LOVED these. Even without coffee they’re still super yum just not quite as magical IMO!

If you do one more thing today (or at least save/add it to your festive treat-making to-do list), pls let it be making these!

Coconut fixes everything

Cherries = a natural source of melatonin so they help promote more restful sleep & they’re also great for muscle soreness & post-workout recovery (Im not so secretly hoping that they will help ease the pain in my poorly arm too!

But most importantly, they really are a little slice of heaven right here on earth and you need them in your life because, yum!

Black Forest Bounty Bars

  • Prep Time: 10 mins
  • Persons: 5-10
  • Difficulty: Easy

  • Ingredients
  • Base-
  • 1/4 C almond butter
  • 1/4 C desiccated coconut
  • 1/4 C choc protein powder*
  • 2 Tbsp cacao
  • 2 Tbsp maple syrup
  • 2 Tbsp coconut oil, melted
  • 1 tsp finely ground instant coffee – I used mocha before you speak coffee
  • 1 tsp vanilla
  • Pch salt
  • Cherry coconut filling-
  • 1 1/2 C desiccated coconut
  • 3-4 Tbsp dried cherries (or cranberries)
  • 1 1/2 Tbsp coconut oil
  • Choc Topping-
  • 1/3 C dark choc
  • 1/2 tsp finely ground instant coffee
  • 1 tsp coconut oil – opt
  1. Instructions
  2. Place all base ingredients into a bowl and stir until well combined.
  3. Press your brownie base into a lined loaf pan
  4. Place all ingredients for your cherry coconut layer into your blender or food processes and process until combined.
  5. Pour cherry coconut filling onto your brownie base
  6. Place into the freezer to set – should take around  15-20 minutes
  7. Melt choc + coconut oil and espresso, if using, set aside
  8. Once your bars have set, remove them from the freezer and slice into desired size
  9. Drizzle your sliced bars with melted choc
  10. Enjoy xo
