What. A. Week. Said me in the middle of Tuesday!

Cookies , nut butter and lots and lots (and lots, and lots, and lots AND LOTS) of coffee (and chocolate) will definitely be required!

Construction workers turned the power off to our apartment building without a word of warning! Thankfully we had all had hot showers and coffee (phew!) but sadly the washing machine was caught mid load . . .  that was fun. Said no one.

Spunky husband broke a tooth (not on anything I had given him) and now has to have a crown put on.

Then, I made the most delicious smoothie and proceeded to drop it all over the kitchen floor, and myself without having had more than a sip. It was delicious. One of my best creations yet! And I didn’t even get to enjoy it!!!

Hmph!

Well, they say bad things always happen in three’s so I guess that’s me taken care of for the week (month/year , hopefully).

Speaking of threes . . . not all things that come in threes are bad because that’s how many ingredients ( + a handful of spices) that you’ll need to make these insanely delicious cookies . . .

It’s also roughly about as many minutes as it will take you to mix them up and get the in the oven.

And if you’re anything like me, it’s about as many minutes as it will take you to inhale, I mean devour , I mean politely sit and quietly savor the entire batch, I mean your first cookie . . .

You guys, these cookies . . . they’re soooo good!

They’re subtly sweet, deliciously buttery , crisp and crunchy , but not too crunchy, with a gentle heart and belly warming hum of chai inspired spices.

So simple but sooooo good! I’m talking next level delicious here , friends!

They remind me of good ol’ fashion shortbread – or like those classic Arnott’s scotch finger biscuits – remember how good those were? I loved those as a kid Except these are better in my opinion because we take it to a whole new level by adding a pinch of our healthy homemade chai spice mix.

I don’t know what it is about that combination of spices, even just straight up cinnamon – I absolutely adore it. There’s something I find so comforting about it. The smell alone, warms me down to the depths of my soul. And, that warm cozy feeling is exactly what you get when you bite into these cookies.

Buttery, sweet, perfectly spiced, melt in the mouth , deliciously simple, secretly healthy, soul food – and just what I needed after having such a rocky start to the week – or just anytime really because I’m always up for a cookie (or 3) .

And although they are all kinds of incredible served simply as they are, and I’m not saying that you have too, although I sort of kind of am because, I think you and I can both agree that life’s just better when it’s dipped in chocolate (and taken with a pinch of salt), am I right?

Oh you know I am . . .

Cookies + chai + chocolate = allllll of the yes!

That being said, if you want too (you know you do), I strongly encourage you to melt some of your fave dark chocolate and give those chai spiced cookies a delicious little dunking . . .

Then finish them off with a cheeky pinch of flaky sea salt.

So not at all necessary but also very, VERY worth it.

Made with just 3 ingredients (and a handful of spices) that I bet you have on hand already and come together in one bowl, with one spoon and can be ready to devour in less than 15 minutes!

3 Ingredient Flourless Spiced Cashew Butter Cookies
{Gluten Free – Grain Free – Dairy Free – Refined Sugar Free – Low Carb – Keto – Vegan – Paleo Friendly}

Makes 10-12 Crisp , crunchy , buttery, sweet, perfectly spiced cashew butter cookies.

Ingredients –

1 cup of cashew butter – or nut/seed butter of choice

3/4 cup of plant based/monk fruit sweetener – or coconut sugar

1 egg – vegan friends sub flax egg

1/2 teaspoon of salt + extra for sprinkling

1/2 – 1 teaspoon of healthy homemade chai spice mix – depending on how spicy you like things – or just sub cinnamon – but please use the chai!

Optional add in –

 2 scoops of Vital proteins unflavored collagen peptides – for gut healing goodness

Optional (but, not really) for serving –

1/2 Cup (1 block) of your fave dark chocolate

Method –

1 – Pre-heat oven to 175’C/350/F

2 – Line a baking tray with baking/parchment paper  (or a silpat mat) and set aside)

3 – Whisk egg, sugar, spices, salt and collagen, if using, in a medium size bowl until well combined.

4 – Add cashew butter and stir until it comes together to form a dough.

5 – Scoop, roll and press into desired shape and size and sprinkle with a little extra salt.

If you want the pretty pattern on top use a fork to gently press down in the centre.

Note – keep in mind these cookies don’t really spread much so shape them how you want to eat them.

I like to make mine on the smaller side and tend to use about 2 Tablespoons of dough per cookie. Feel free to make them as big or small as you like #youdyou just make sure you adjust your baking time accordingly.

6 – Bake smaller cookies for 6-8 minutes, or larger cookies for 10-12 – until they are deliciously golden and feel just set. You may think they are slightly under done but trust me, they’re perfect. They firm up as they cool.

7 – Now comes the hard part, you need to leave your cookies on the baking sheet for 5 minutes or so to cool and set before you move them.

If you try to move them too soon they will crumble. They will still be delicious but they may fall apart in your hands. If this happens, fear not, either continue on and inhale the crumbs or set them aside and use them as a smoothie topper!

Optional extra –

8 – Melt chocolate by your preferred method.

9 – Line a baking tray with non-stick baking/parchment paper – set aside.

10 – Dip each cookie in your melted chocolate and place on to your prepared baking sheet.

11 – Repeat until all cookies are deliciously dipped.

12 – Sprinkle with sea salt, if you want.

13 – Devour.

Cookies should keep well in an air tight container for up to 7 days (ours have never lasted that long so that’s best guess) or can be frozen for up to 3 months.
