No bake {date free} millionaire brownie bars, where have you been all my life?!

Think millionaire shortbread (aka salted caramel slice) but instead of the traditional shortbread base we have a rich chocolate brownie!!

This may just be one of the best ideas I’ve ever had. Ever!

I’m not entirely sure why they’re called millionaire bars, apparently it’s because they taste incredibly rich which could be right but, what I do know is that your life will be a whole lot richer simply by eating them. Guaranteed!

Super fudgy rich chocolate brownie topped with a layer of lightly salted date free almond butter caramel finished with a cool crisp layer of espresso infused dark chocolate!

And yes, for those who aren’t in to coffee, you can leave it out, although, my dear ol’ dad who hates coffee had and LOVED these bars. But, even without that hint of espresso they’re still super yum!

If you do one more thing today (or at least add it to this weeks to-do list) , please let it be making these bars!

They really are a little piece of heaven right here on earth and you need them in your life because, yum!

1 bowl + 30 minutes go, go get em’

 

No bake {Date Free} Millionaire Brownie Bars!

Makes 10 bars or 20 bites

Ingredients –

Base-

1/4 cup chocolate pea protein – I use Naked Harvest Supplements chocolate swirl THRIVE protein (it’s amazing!) XOEM = 15% off if you want to try it.

1/4 cup coconut flour

1/4 cup almond butter

2 Tablespoon cacao

1 sachet Before you speak decaf mocha (EMS10 = 10% off) – can sub 1/2-1 tsp instant espresso

1/4 C nut milk + more as needed – just to bring the base together

A pinch of salt

Caramel-

1/2 cup of almond butter

1/4 cup coconut oil

1/4 cup maple syrup – I use Lakanto sugar free monk fruit maple

1 teaspoon vanilla

A pinch of salt

Optional add in’s ;

1 scoop Collagen – I use Naked Harvest Supplements pure collagen – XOEM = 15% off if you want to try it

1 teaspoon of Gevity Rx natural body glue – for gut healing goodness – EMS10 = 10% off if you want to try it
natural body glue (EMS10 = 10% off) – for gut health .

Chocolate Topping-

1/3 C dark choc

1/2 tsp instant coffee – optional but SO GOOD!

1 tsp coconut oil – optional

Method –

1 – Place all base ingredients in to a bowl and stir until well combined.

2 – Press your brownie base in to a lined loaf pan

3 – Wipe the bowl clean, then add in all the ingredients for your caramel filling and stir until smooth and well combined.

4 – Pour caramel on to brownie base

5 – Place in to the freezer to set – should take around  20 minutes

6 – Melt choc + coconut oil and espresso if using , set aside

7 – Once your bars have set, remove them from the freezer and slice in to desired size

8 – Drizzle your sliced bars with melted choc

9 – Devour!

Store in the fridge – can be frozen.
