So remember when I told you darling daughter of mine was sick but that I was doing just fine . . . yeah now . . . not so much!

My poor, throbbing head . . .

When I’m sick like this the only things that seem to taste slightly melted ice cream. I’m talking straight up vanilla by the bucket tub bowlful, nothing soothes an aching head and sore throat quite like it does it?

Well apart from soda . . . something about those bubbles just hit allllll the right spots am I right?! Ugh I totally am.

So, to balance out the ridiculous amount of ice cream and soda I have consumed in my state of delirious, feverish self medication I bring you my one healthy saving grace.

This muesli!

I think it tastes even better because it’s so easy to make, just chop cup some dates and (cocoa roasted) almonds then throw them in a bowl and your done.

No added sugar, low Gi, high fibre and packed with protein oh and antioxidants . . . it totally cancels out all the ice cream and soda right? And I’m thinking it would be a good (and incredibly healthy) way to sneak some chocolate into your breakfast bowl lead into our Easter festivities. What do you think?

Old fashioned rolled oats, sweetened with the incredible, juicy, chewy deliciousness from those magical medjool dates, some high protein/fiber cereal to give you that killer crunch factor then its all rounded out with an antioxidant rich protein kick (not to mention a hint of chocolately goodness) thanks to the cocoa roasted almonds.

Seriously addicting!

Especially a big ol’ scoop on top some of your fave greek yoghurt or even just drowned in ice cold milk, or a little of both. Simple, healthy, satisfying. A guilt free way to start (or end) your day. And yes I totally eat most things, especially cereal from a glass/cup/mug . . . don’t you?

Simple Healthy Home made Muesli
Makes approx 3 cups

Ingredients –

2 cups rolled oats

1/2 cup bran flakes (I use special K Advantage)

2-4 medjool dates, pitted and chopped

2 Tablespoons of cocoa roasted almonds, chopped (regular almonds would work fine too, or any other nuts for that matter really)

Ingredients –

1 – Remove pits from dates and roughly chop both dates and almonds.

2 – In a large bowl combine all ingredients and store in an air tight container.

3 – Enjoy with either some ice cold milk or on top of some of your fave greek yoghurt and with a few strawberries along side a cup of (strong) hot coffee.

Healthy never tasted so good

and incase you were wondering . . . this muesli is pretty good mixed into some slightly melted vanilla ice cream . . . #justsayin
