It finally happened . . . the evil, vile, mutant flu germs have taken over.

Considering how sick my poor, sweet little lady has been it was only a matter of time that my immune system laid down in surrender but, I was hoping against all hope that I would skip out on this one.

No such luck.

I actually don’t feel to bad all things considered.  I can’t for the life of me decide which is driving me more insane, the blocked ear, itchy throat or the constant need to blow my nose.

I have moments where I feel absolutely exhausted and just want to take a nap but other than that , and the fact that I just want to chop my own head off to make it all stop, I feel just fine 🙂

Usually when I get sick all I want to do is eat insane amounts of garlic in some form or other but this time things are a little different. All I want is fruit. Sweet, juicy, ripe mangoes to be exact. My body is screaming for more vitamin C or something, who knows?!

All I know is I am craving mango like a pregnant woman craves pickles! And when I was doing grocery shopping before the mutant germs took over mangoes just so happened to be on sale so I stocked up! Love that!

Anyways, enough about me, my mutant flu and how I became a hoarder of mangoes and on with the food.

Today our test it out tuesday recipe is one from wonder woman herself – Ree AKA The one and only Pioneer Woman and it’s straight from her latest cookbook – A Year of Holidays.

Do you guys have this book? Oh I hope you do. If you don’t you need it, it’s seriously incredible, Ree has outdone herself. I want to eat alllllll of the things! So much so I have had a hard time deciding where to even start! So many delicious recipes to choose from and the photos . . . ah-maze!!!!!!!!

This recipe is one I have had my eye on for sometime and with this insatiable mango obsession I could’t fight it any longer, Mango Pico De Gallo had to be made!

You guys . . . I have only ever made a fruity salsa/pico once before and it was delicious but this Mango Pico De Gallo = Mind Blowing!

It’s light, sweet, slightly spicy and a little refreshing all at the same time.

The acidity from the lime juice helps to cut through the natural sweetness of those ripe, sweet juicy mangoes and it also mellows out the sharp, sometimes bitterness of the red onion. Side note – Do you say red onion or spanish onion?  I say both because I can’t decide (←read have no idea) which is actually correct?! Are they the same thing? Thoughts?

Feel free to kick up the amount of chilli and coriander (cilantro) to suit your tastes, I like a subtle little hum of both just hanging out in the background, nothing overly strong or in your face so I used smaller quantities but feel free to kick things up a notch and make it the way you like it.

I should warn you though, this Mango Pico De Gallo is seriously addicting. And I mean seriously. Once I had mixed it all up and went to taste to check the seasoning I just about ate half the bowl there and then.

Not. Even. Kidding.

Then when you bring a crispy crunchy lightly salted corn chip into the equation . . . danger, that’s all Ima say!

This Mango Pico De Gallo is simply incredible. Pure perfection.

Not only is it quick and easy to prepare, it’s also all natural, totally healthy and packed with countless vitamins and minerals.

I’m pretty sure it packs not only a seriously mind blowing flavour punch but also some magical powers because the after day I ate my body weight in this mango pico de gallo I magically woke up feeling 100 times better than I did pre pico pig out consumption.

Eat it straight up as it is, scoop it onto corn chips and go to town, stir it through some steamed brown rice or quinoa, serve it over some grilled chicken or fish – either way you can’t go wrong. Unless of course you don’t make it, then you’re seriously missing out!

Mango Pico De Gallo
Re-written in my own words as appears in The Pioneer Woman Cooks – A Year of Holidays
Makes 1 heaping cup of perfectly sweet, slightly spicy mind blowingly delicious fresh, summer style pico de gallo

Ingredients –

1 large, ripe mango,

1 Tablespoon of coriander (cilantro), finely chopped

1 Tablespoon of spanish (red) onion, finely chopped

1/2 green chilli, finely, finely chopped (more or less to taste)

Juice of 1/2 a lime

Salt and pepper to taste

Method –

1 – Slice your mango either side of the pit removing the cheeks in 2 thick slices.

2 – Using a large spoon, gently scoop the juicy flesh away from outer skin then dice the flesh into small pieces. This is what works for me but feel free to dice your mango by your preferred method. They can be tricky so whatever works baby, just go with it 🙂

3 – Place your diced mango into a small bowl, add your finely chopped coriander (cilantro), onion and chilli.

4 – Squeeze over lime juice then season with salt and pepper and stir to combine.

5 – Taste and adjust seasonings as required.

6 – Grab a big ol’ bag of your fave corn chips and let the feast begin!
