I am stuck hard and fast in the middle of a double addiction.
Addiction 1 – Peanut butter.
Can not get enough → case → and → point
Addiction number 2 – I can’t stop devouring making no bake treats, I mean clearly . . . check out exhibit → A, → B, → C and → D

The more I make the more I eat and the more I eat the more I want.
They are just so unbelievably quick and easy to make but so, so delicious!
Today’s fix . . . are you ready for it . . . Healthy No-Bake Double Chocolate Peanut butter Cookie Dough Bites
I mean come on you had to see this come coming.
And because they are totally healthy its totally acceptable that I am currently on batch number . . . well whose counting.
Low GI and packed with fibre thanks to the rolled oats not to mention a good hit of protein from the raw cashews and peanut butter then theres the rich in antioxidant goodness from the dark chocolate cocoa oh and the dark chocolate chips . . . thats a double whammy right there. Winning!
Seriously intensely delicious bites of fudgey, peanut buttery, chocolatey goodness.
These babies have become a regular component of my pre-workout power up and have on more than one occasion saved me (and my loved ones) from unleashing the dreaded hungry/cranky 330itis version formerly known as me.
A handful of ingredients, ready in minutes totally life saving . . . dooooooooo it!
Healthy No-Bake Double Chocolate Peanut butter Cookie Dough Bites
Makes approx 20 intensely chocolatey, totally healthy bites of deliciousness
Ingredients –1 cup raw cashews
1/2 cup rolled oats (I used regular rolled oats not quick/instant)
1 Tablespoon of cocoa powder (I use Hershey’s Special dark)
1 Tablespoon maple syrup (the real stuff please)
1 Tablespoon of vanilla extract
2 Tablespoons of your fave peanut butter (PB2* works too)
A pinch of salt flakes
2 Tablespoons of dark chocolate chips
Method –
1 – Place cashews and oats in your blender or food processor and pulse until they are a fine(ish) powder.
2 – Add maple syrup, vanilla, cocoa powder and salt flakes and pulse until combined. Mixture will come together into a sticky looking kind of “dough”
* Note – if your mixture is dry try adding a splash of water 1 teaspoon at a time (or a little extra maple syrup and/or peanut butter) until it comes together.
3 – Add Peanut butter and pulse again to combine.
4 – Add chocolate chips and either pulse again until just combined or simply stir through by hand.
5 – Using roughly a tablespoon of batter at a time, roll into bite size balls and transfer directly into your mouth an air tight container and store in the fridge. FYI – these delicious little morsels can also be kept in the freezer.

I tried to make these today but they came out too dry to be rolled into balls. I triple checked the ingredients & amounts and am certain I followed the recipe correctly. In the end I added a tablespoon of honey and another tablespoon of maple syrup in order to get it into a roll-able consistency. Very tasty though!

mine came out too dry as well. unfortunately i couldn’t do anything to make them rollable…so i used some spoons. great recipe anyway, really tasty!!

I followed directions and came out too dry to roll so added another 3/4tsp of peanut butter. Also only got 19 balls out of the recipe. They are a little bigger than a pop in my mouth but not by much… Kids are excited to try them!

These are great! Mine were too dry to roll by following the instructions. Nothing a little peanut better couldn’t fix! I added another 2 tablespoons of peanut butter and 1 tablespoon of maple syrup. Yum.
Try also Tru-Nut if you can’t find PB2. The chocolate peanut butter is fabulous. It’s the same as PB2, but seems to be more widely available.
Not sure how many I got in total as the kids kept sampling! Thanks for the great recipe

Is it possible this recipe should be doubled in order to get the 40 count yield? I just made these, used exactly the ingredients posted, did no sampling, and finished with 23 really small balls. But if the recipe were doubled I would likely have 40 reasonably small balls. Just thinking the “double this recipe for 40” could be added for those of us interested in getting the correct number of bites and calorie per ball count. Thanks.

This was such a wonderful recipe! Instead of cashews, I used Blue Diamond dark chocolate almonds. I also put a little bit of extra maple syrup and a touch of water. I used the Ninja food processor, and the chocolate chips were a little chunky. I found that this made the texture even better. My one year old and my husband also loved them!

How long are these shelf stable for? I’m celiac and dairy free and looking for foods that I can take with me on my flights. This looks like something my whole family would enjoy..
They should keep well for at least 5-7 days stored in an air tight container. They don’t have to be kept refrigerated but thats just how I prefer to eat them. They would make a great inflight/travel snack!
