So it would seem I am sticking to this whole no-bake thing.

It’s just waayyyy to hot.

I’m sorry if you are one of my sweet invisible internet friends that are currently freezing your adorable little butts off on the other side of the world, Oh how I wish I could join you.

I don’t do heat every well. I mean there are only so many layers you can take off you know? It’s just so much easier to snuggle up and get warm don’t you think?

If you are currently shivering through the great freezefest of 2013 – What? freezefest is totally a word.

Anyways, If you are currently freezing your cute little booty off I suggest you make yourself a big ol’ cup of tea (I highly recommend this ah-mazing  sugar cookie sleigh ride tea by the incredible  people at Celestial Seasonings, it would go so perfectly with these yummy, fudgey, healthy no-bake PB & J thumbprint cookies that we are making this fine day. Enough about me, go grab your mixing bowl and lets make these cookies already.

These cookies are super simple to make, all you have to do it stir your ingredients together, let the dough set for a few mins in the freezer then all thats left to do is roll, shape, crumb, fill and eat!

Boomshackalocka! Done.

I should tell you these cookies are a little different from your average cookie they tend to be a little more like peanut butter fudge with a sweet, tart jam (or jelly) centre.

Now, because these cookies are a little more fudge-like than cookie-like I crushed up one sweet a little cookie to add some crunch to these bad boys. Just to give some contrast in texture you know?! And you know what . . . so, so good!

You could definitely  swap out the cookie crumb for some of your fave nuts all crushed up, I’m thinking a Tablespoon of these cocoa roasted almonds all crushed into a delicious chocolatey oblivion would make a killer crunchy crumb for these fudgey little cookies, you know if you’re into that sort of thing (and you totally should be #justsayin )

These cookies are also not overly sweet, taste the dough before you pop it into the freezer to set and add a little stevia (or regular or brown sugar) to add a little extra sweetness if you feel the need. I personally love them just the way they are, not overly sweet, packing a super fudgey peanut butter flavor punch with a tart, sweet, vibrant, jammy little centre.

These cookies would make the perfect snack to leave out for santa alongside a big ol’ glass of milk. Yep totally happening in my house, are you in?

Healthy, Fudgey, No-Bake PB & J Thumbprint cookies – just yes!

Fudgey, No-Bake PB and J Thumbprint Cookies
Makes approx 20 perfect, punchy, super fudgey, and jam tarty peanut butter packed cookies

Ingredients –

1/3 cup (heaping) of peanut butter (PB2 works too)

1 cup of almond meal

1 Tablespoon of coconut flour

1 teaspoon of vanilla extract

2 Tablespoons of maple syrup

1 teaspoon of coconut oil, melted and cooled

A pinch of salt flakes

Milk Arrowroot cookie crushed/crumbled (can sub for any plain, sweet cookie/biscuit you have on hand)

1/8 cup of your fave jam – homemade or store-bought (I used my raspberry & vanilla chia jam)

Method –

1 – In a medium size bowl combine all ingredients except the jam and stir until smooth and well combined.

2 – Roll your dough into a long log shape and wrap in cling wrap then pop that bad boy into the freezer for 10 mins to firm up (thuds just makes it a little easier to handle/shape)

3 – Line a baking tray with some baking/parchemnt paper and set aside.

4 – Slice your log into rounds then roll into delicious little balls. Mine were approx a Tablespoon each in size.

5 – Using your thumb gently press the centre of each ball to make a little indent to store that sweet, glorious jam.

6 – Spoon a little of your fave jam into each delicious little peanut buttery indent and repeat until all cookies have been filled.

7 – Store cookies in the fridge (or freezer) until you are ready to devour share with your loved ones alongside a nice tall glass of milk.

FYI – I suggest you keep these cookies in the fridge or freezer if your in a warmer climate because the fudge can soften significantly if left out in the warmth for to long. Also, I used my Raspberry and Vanilla Chia for the jammy little centre and although it was all kinds of delicious because it is naturally a slightly thinner consistency to your store bought jams/jelly some of that glorious vibrant natural colouring did bleed into the PB fudge after a while. Still delicious though. Just wanted to let you know
