At last, at last it’s here a last!!! MY BIRTHDAY WEEK!!!! No so fun in stage 4 lock-down but, sprinkles and donuts make everything better!

Light, fluffy, soft, tender (secretly healthy) strawberry infused, vanilla donuts finished with an optional (but not really) white chocolate glaze and alllll of the sprinkles!!!!

Healthy enough to serve for breakfast (with a big ol’ vat of coffee, of course) but indulgent enough to enjoy for a cheeky little late night treat (with a cup of chocolate chai for me please)!

Super simple to make using just a handful of ingredients that I bet you have on hand already and come together in 1 bowl with 1 spoon and can be ready to devour in just 20 minutes!

Gluten Free – Dairy free – Grain free – Refined sugar free –  Low Carb – Paleo –  Keto – Vegan friendly.

I don’t know what else to tell you, but clearly you need them in your life because, yum!  I mean it is my birthday (week) after all, it’d be rude not to.

1 bowl, 6ish ingredients and 20 minutes!

Let the celebrations begin!!!!!

Strawberry Cream Funfetti Donuts

Makes 6

Ingredients –

2 eggs

2 Tablespoons of vanilla yoghurt

2 Tablespoons of unsweetened vanilla almond milk

1 Tablespoon of before you speak coffee sugar free vanilla creamer – or regular vanilla
The creamer makes them extra fluffy – use EMS10 to get a discount if you want to try it

1 cup almond flour

1/3 cup freeze dried strawberries, crushed

1 teaspoon of coconut flour

1/4 cup monk fruit sweetener – I use Lakanto

1 teaspoon baking powder

1/2 teaspoon of baking soda

A pinch of salt

For the frosting –

1 block of white chocolate – I used Loving earth

For the pink tint I added this gypsy rose latte mix by Knowrish well – amazing ingredients and super yum!

SPRINKLES!!!!!!!!!

Method –

For the donuts ;

1 – Pre-heat oven to 175’C/350’F

2 – Grease your donut pan (or muffin tray) then set aside.

3 – Place all donut ingredients apart from the freeze dried strawberries in to a medium size bowl and stir until well combined.

4 – Add freeze dried strawberries and stir to combine.

5 – Pipe (or spoon) your donut mix in to your prepared donut (or muffin) tray. I like to pour the mixture in to a zip lock bag , snip of the corner and pipe it in to the tray. I find it a lot easier (and way less messy) to do it this way.

6 – Bake for 10-12 minutes (or 15-20 if doing muffins) until the top springs back when lightly pressed.

7 – Set aside to cool while you make your glaze.

While your donuts are cooling prepare the frosting –

1 – Melt chocolate by your preferred method

2 – Stir in latte mix (or colouring of choice)

3 – Dip donuts in to melted chocolate and sprinkle with sprinkles.

4 – Devour!
