Just popping in to deliver you a bonus recipe because guys, these donuts are SO life changing delicious that I just couldn’t keep them from you!

Light, fluffy, soft, tender (secretly healthy) deliciously buttery, cinnamon spiced donuts infused with sweet juicy strawberries finished with the dreamiest white chocolate frosting !

These donuts are something I wanted to make for a realllllly long time but for some reason or another, I just never got around to it.

Well, this past weekend, living my best ISO life, I decided it was time and you guys . . .

They turned out SO good! So much better than I ever imagined and I’m sad I waited so long to make them!

Eve and spunky husband have even gone as far as declaring them to be one of the best things I have ever made! Ever! I’m talking up there with my gingerbread twix bars!!!

And would you look at how pretty they are?!

Honestly, I don’t know what else to tell you, clearly you need them in your life, ASAP!

Healthy enough to serve for breakfast (with a big ol’ vat of coffee, of course) but indulgent enough to enjoy for a cheeky little late night treat (with a cup of moon mylk for me please)! Who’s in??!

Healthified or not I can’t think of a better way, to start, end of fill the day than with 1 (or 2 or 3 or 4) of these bad boys!

Gluten Free – Dairy free – Grain free – Refined sugar free –  Low Carb – Paleo –  Keto – Vegan friendly.

1 bowl, 6ish ingredients + 20 minutes!

The only thing that’s left to decide is which will you eat first?! Full white with pink drizzle for me please?! HBU?

Low Carb - Sugar Free - Strawberry shortcake donuts

  • Cook Time: 15 mins
  • Persons: 6-9
  • Difficulty: Easy

  • Ingredients
  • 2 eggs
  • 2 Tablespoons of vanilla yoghurt
  • 2 Tablespoons of unsweetened vanilla almond milk
  • 2 teaspoons of vanilla
  • 1 cup almond flour
  • 1/4 cup freeze dried strawberries, crushed
  • 1 teaspoon of coconut flour
  • 1/4 cup monk fruit sweetener – or granulated sweetener of choice
  • 1/2 teaspoon of cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • For the frosting –
  • 1 block of white chocolate – I used dairy free
  • For the pink tint I added this gypsy rose latte mix by Knowrish well – amazing ingredients and super yum!
  1. Instructions
  2. For the donuts ;
  3. Pre-heat oven to 175’C/350’F
  4. Grease your donut pan (or muffin tray) then set aside.
  5. Place all donut ingredients apart from the feeze dried strawberries in to a medium size bowl and stir until well combined.
  6. Add freeze dried strawberries and stir to combine.
  7. Pipe (or spoon) your donut mix in to your prepared donut (or muffin) tray. I like to pour the mixture in to a zip lock bag , snip of the corner and pipe it in to the tray. I find it a lot easier (and way less messy) to do it this way.
  8. Bake for 10-12 minutes (or 15-20 if doing muffins) until the top springs back when lightly pressed.
  9. Set aside to cool while you make your glaze.
  10. While your donuts are cooling prepare the frosting –
  11. Melt chocolate by your preferred method
  12. If tinting half, divide in to a separate bowl and stir in latte mix (or colouring of choice)
  13. Dip donuts in to melted chocolate, drizzle any extra to make pretty patterns and sprinkle with extra freeze dried strawberries (or sprinkles of choice because fun!!) .
  14. Devour!
