Here we are . . . Tuesday has rolled around again. Is it just me or are these days/weeks just going quicker and quicker?!

Anyway, Tuesday . . . this week our test it out Tuesday recipe is one that It’s also a recipe that is very dear to my heart, it’s one I have adapted from the gorgeous Lisa and her “Living Gluten Free with Style and Grace” cookbook (do you have a copy? Only $7.99 friends, seriously – money well spent #justsayin)
One sip of this incredible pumpkin spice smoothie and I was transported to my happy place. Denver . . . our little family’s all time fave place to visit. I wasn’t just whisked away to my beloved Denver, it was Thanksgiving . . . the air was crisp and there were flutters of fresh snow flakes in the air.
Just thinking about it now I can’t help but close my eyes and drink in the crisp, cool fresh air. I love how certain foods can do that, just take you away to another time and place. It really is magical.
This smoothie tastes like a dream and clearly holds magical powers. It’s thick and rich, smooth and creamy and perfectly sweet with a hint of vanilla and the perfect, soul warming hum of cinnamon. The tartness from the greek yoghurt really helps to not only give this smoothie an incredibly creamy texture but also balances out the sweetness of the maple syrup and vanilla making it just perfectly sweet.
This smoothie is the perfect anytime meal/snack. Breakfast on the go, yes. A quick mid morning pick me up, oh yes. Lazy lunch or sweet satisfying guilt free dessert – just yes! It also makes a killer post workout treat with a scoop of vanilla protein powder if you’re into that kinda thing . . . It truly is divine. The perfect way to sneak fussy husbands children an extra serve of fruit and veg.
I’m also thinking for those of you looking for a way to get your pumpkin pie fix in a slightly (ok massively) healthier way this smoothie will do the trick.
If you’re new to the whole sweet pumpkin flavour combination fear not invisible internet friend of mine, it doesn’t actually taste like pumpkin in the savoury way your mind would tell you it should. If you really don’t feel like you can do it, maybe swap the pumpkin for sweet potato. But please just make this creamy, dreamy, delicious, magical pumpkin spice smoothie.
A handful of simple ingredients, a minute in the blender then close your eyes and drink in the subtle, sweet, heart warming and healthy deliciousness ♥

Pumpkin Spice Smoothie
Slightly tweaked and written in my own words from Living Gluten Free with Style and Grace
Makes 1 large or 2 small seriously smooth, delicious creamy fall flavoured smoothiesIngredients –
1/2 cup milk
1/2 cup greek yoghurt
1/2 over ripe banana (preferably frozen and pre-sliced but fresh will work just fine)
1/4 cup pumpkin puree
1 teaspoon of maple syrup
1 teaspoon of vanilla extract
1/8 teaspoon of ground cinnamon
a pinch of ground nutmeg
1 teaspoon of vanilla
1/2 teaspoon of Xanthan Gum (gluten free natural thicken agent that will result in an thicker smoothie and can be found ion the health food section of your local supermarket)
1 cup of ice
Method –
1 – Place all ingredients into your blender and process until smooth and creamy. Taste and add milk/water/ice/sweeteners to taste
