I found this recipe browsing the many delicious pages of poires au chocolatThese cookies are wonderful just as they are (I have adapted the recipe slightly, just adding a dash of vanilla). Somehow these cookies manage to have a fantastic crunch yet still just melt in your mouth.

With a husband who has a soft spot for peanut butter and my yearning to keep him with a variety of enjoyable and tasty treats in his work lunch box I just had to give them a try. Teamed perfectly with an ice cold glass of milk, how can you go wrong?

Cute and crunchy Peanut Butter Cookies
(makes 48 bite size cookies)

Ingredients

75g butter
1/2 cup peanut butter
1/2 brown sugar
1 1/4 cup plain flour
1 egg
1 tsp Vanilla
3/4 tsp Baking soda
Caster sugar and a sprinkle of cinnamon for dipping/decorating)

Method –

Preheat oven to 175’C (350’F)

Place butter in  a medium bowl and beat for a few minutes just to soften.

Add brown sugar and beat until just combined.

Next add your peanut butter and beat until combined.

Add vanilla and egg and beat until just combined.

Lastly admire the beautiful peanut-buttery goodness dripping from your beater….when you can restrain yourself no longer go ahead and have a little taste (your secret is safe with me ;)….now you may add your flour and baking soda and you guessed it….

beat until just combined 🙂

In a small bowl sprinkle 2-3 Tablespoons of caster sugar and then sprinkle on a pinch of cinnamon then give a a good stir.

Shape your cookies into whatever size you like. Obviously the larger they are the longer they will take to bake.

I made mine very small (some may call them petite or even bite size:)) the more the merrier right??

I used about a teaspoon of cookie dough per cookie (I ended up with 48 or the delicious little morsels…..lucky me :))

Roll the dough in the palm of your hand to shape the cookies into precious little rounds

Then if you are dipping them in the sugar/cinnamon mix lightly press one side of your cookie into the sugar mix

before laying them onto the baking sheet. Then repeat with remaining cookie dough.

I decided to dip half and leave half au natural 😉

Bake (at 175’C) for 10 mins then allow to cool slightly before you begin to devour them because they smell so divine….I mean transfer them to a wire rack to cool completely.

Now pour yourself a mug full of ice cold milk (or if its cool make yourself a hot cup of tea or coffee) …

choose your cookie (or cookies from the mountain of deliciousness before you) and settle yourself in for a tasty, tasty treat.
