So I thought I would put together a quick little round up of some of my fave healthy mexican recipes for you, just incase you need a little last minute inspiration for your cinco de mayo celebrations.
Ready?
Ok hold on to your hats people, here we gooooooo –
I thought we could kick things with a little {Vegan, Dairy Free & Paleo Friendly} Pina Colada Breakfast Smoothie
We could snack through the morning with a little of this magical mango pico de gallo
Or you could stick with the more traditional pico if you prefer. FYI – If you have never made your own pico you really need to. It’s so easy and so good! Seriously life changing!
For lunch we could have ourselves a couple of these delicious little Mexican Meatloaf muffins
Or maybe some of this Vegetarian chilli . . .
We could snack the afternoon away by munchin’ on some of these crisp, crunchy Chilli and Lime Oven Roasted Chickpeas . . .
All while sipping on a glass of this light and refreshing, All natural lemon lime iced green tea . . .
For dinner we could have ourselves some Spaghetti squash and black bean tacos
With a big ol’ side salad smothered in this creamy, dreamy Avocado, Chilli and Lime Yoghurt Dressing
FYI – You might want to make a double batch of this dressing because one taste of this deliciousness and I know you will want to dive head first into the bowl dip carrot after carrot (or corn chip after corn chip) – you have been warned 😉
And for dessert we could have ourselves a couple of these light and fluffy Lemon Lime {Baked} Donuts
