Don’t you just love it when out of nowhere, you get an idea to randomly throw a handful of ingredients together and the end result is so delicious that it kind of blows your mind?!

Especially when it’s the end of the week, the fridge is looking pretty empty, you’re tired and hungry but don’t feel like cooking?!

Well that my friends is how today’s “recipe” was born.

At the time that I was making it I didn’t really think much of it. I just kind of randomly grabbed a few ingredients and threw them into the slow cooker – I knew I had a busy, busy day ahead and, I knew that come the end of the day I’d be tired, hungry and not really in the mood for cooking. We’ve all been there right?!

And, although it was early and I had no idea what I might feel like come dinner time, I figured why not go with Mexican inspired flavors because;

1 – A jar of salsa was the first thing I saw when I opened the fridge and

2 – You can’t go wrong with Mexican, am I right?!

Oh you know I’m right and I know you guys are going to love, love love this chicken as much as I do.

It’s all natural made with just a handful of ingredients that I bet you have on hand already,  it’s delicious, nutritious and is guaranteed to make your house smell all kinds of awesome while your dinner pretty much cooks itself.

It’s so simple, so delicious and incredibly versatile.

Deliciously winning on so many levels!

Now, when I say it’s simple I mean it’s really, really simple.

Like so simple that I’m kind of embarrassed to call it a recipe.

It’s so simple that I wasn’t even going to bother sharing it but then I tasted it and realized that it was way to delicious to keep to myself.

Plus, when I shared a pic of it on Instagram last week you guys seemed to just love the idea of it, of course you did, you’re smart like that ♥

I mean, who doesn’t love a quick and easy, flavorsome dinner that pretty much cooks itself?!

And it’s Mexican, everyone loves Mexican!!!

So, to make your super simple, sweet and saucy chicken, all you have to do is sprinkle some chicken with a little Mexican seasoning, chop up an onion, smash a couple of cloves of garlic and throw it all into your trusty ol’ slow cooker.

Then, you simply pour over some of your favorite salsa, pop the lid on and you’re pretty much done.

4-6 hours later you simply shred your sweet and spicy, super saucy chicken and enjoy.

Minimum effort, maximum flavor it’s what I’m all about!

The chicken itself is succulent and juicy with a nice kick of heat thanks to our Mexican seasoning and the slow cooked onion adds a touch of sweetness and a cheeky squeeze of lime adds a touch of zesty freshness that helps to balance out the heat and leaves you wanting more.

The hardest part of making this dish is deciding how your going to eat it first?!

You could use your chicken to make any of your fave Mexican dishes – tacos, nachos, quesadillas, fajitas, burritos, add it to a simple salad, or an omelet or fritatta or just stuff it into a baked sweet potato, so many delicious options.

All natural, quick and easy, delicious, nutritious, succulent, juicy, sweet and saucy, slow cooked, Mexican spiced chicken;

I mean seriously what’s not to love?!

Make it. Eat it. Love, love, love it.

Sweet and Saucy, Mexican Spiced {Slow Cooker} Chicken
Makes approx 4 cups of succulent, juicy, sweet and spicy, seriously saucy, slow cooked, Mexican spiced chicken.

Ingredients –

2 large skinless chicken breast – approx 250g (could sub thighs if you prefer)

1 small red onion, roughly chopped

2 garlic cloves, minced

1 Tablespoon of Mexican seasoning – I use my healthy, homemade Mexican seasoning but your fave store bought will work just fine – you may want to add a little more or a little less to taste. Do what you feel 🙂

1 cup of your fave salsa

A squeeze of fresh lime juice

Salt and Pepper to taste

Method –

1 – Sprinkle chicken with Mexican seasoning and toss to coat.

2 – Place all ingredients, except the lime juice, into your slow cooker and stir to combine.

3 – Cook on low for 4-6 hours until chicken is cooked through.

4 – Once cooked, remove chicken to a plate or chopping board and allow it to rest for 5-10 mins or so before shredding.Once cooked, allow chicken to rest for 10 mins or so before shredding.

5 – When you have shredded your chicken, return it to the slow cooker, add your cheeky squeeze of lime and stir to combine.  If you feel like you’d prefer a thicker sauce you could mix 1 teaspoon of arrowroot (or cornstarch) with 1 Tablespoon of water and add it to the crock pot, stir to combine and allow to sit for 10 mins – this will result in a thicker sauce.

6 – You could use your chicken to make any of your fave Mexican dishes – tacos, nachos, quesadillas, fajitas, burritos, add it to an omelet or fritatta or just stuff it into a baked sweet potato, so many delicious options.
