Today when I was out window shopping procrastinating running errands I noticed the lady standing next to me had her shirt on inside out . . . Poor lady I thought, I wonder how long girlfriend has been wandering around like that, with her shirt on all inside out . . . Do I tell her? Maybe its her thang . . . Maybe it’s what the cool kids are doing these days, what do I know? I’m no fashionista that’s fo’ sure. I mean clearly, because who uses the word fashionista?!

Anyways I digress . . . seriously though, what would you have done?

I didn’t tell her . . . I feel terrible . . . should I have?

I know I told you I have been a terrible friend not sharing easter recipes and what not but seriously, I would tell you if your shirt was on all inside out.

I promise. I totally would tell you, my invisible internet friend, if your shirt was on inside out.

And because I know some of you will be looking to serve your friends and family a killer fish dish this good friday I bring you my all time fave, out of this world, bonkers delicious, super simple home made teriyaki salmon.

This salmon . . . oh you guys this salmon. It’s seriously divine!

Simple ingredients I am sure you have on hand, Tamari, maple syrup, ground cinnamon and garlic is all you need. The brown sugar adds a slight sweetness and helps the salmon caramelize and gives it this incredible smoky flavour.

Succulent salmon that just melts in your mouth, and is of course seriously healthy with its omega 3’s and all that. It’s the best way to kick off your super chocolate eating binge fest easter long weekend.

Serve it with a simple salad or some cauli-rice (or regular rice or quinoa if you prefer) and some broccoli and I guarantee your family will love it.

FYI – This teriyaki is ah-mazing on just about anything, chicken, steak or even just a veg stir fry. Seriously the best. Even if I do say so myself.

Simple Healthy Homemade Teriyaki Salmon
Serves 4+

Ingredients –

2 Tablespoons coconut aminos

2 Tablespoons Maple Syrup (sub honey or date paste to make whole 30 compliant)

1/4 teaspoon ground cinnamon

1 garlic clove, crushed

450g (1 lb) salmon fillets – (mine were approx 115g/4 oz each)

Fresh parsley and sesame seeds for serving

For the simple salad –

Mixed salad greens, rinsed

Baby roma tomatoes, quartered

Avocado

Method –

1 – In a medium size bowl combine coconut aminos, maple syrup/honey or date paste, cinnamon and crushed garlic and stir to combine.

2 – Place salmon into the bowl, and turn to ensure evenly coated. Allow to sit for at least 20 mins- over night.

3 – Cook salmon in a medium-large size frypan/skillet over medium heat for 2-3 mins each side, until cooked through to your liking.

4 – Allow the salmon to rest for 2-3 mins while you prepare the salad.

5 – To serve, divide the salad evenly between each plate and top with a fillet of salmon. To finish, sprinkle with sesame seeds and fresh parsley along if desired
