I’m so sorry for going MIA – I’ve had some major technical issues and also life issues happening (nothing major just that pesky tear in my shoulder is playing up & causing all kinds of trouble #overit but also, #grateful because it really could be a whole lot worse) over here but, I think my tech issues are all fixed, for the time being anyway. And as for the shoulder . . . I am still on the (very long 12-18 month) wait list for surgery but, I have a check-up with both my phsyio & doctor next week so please send all the good vibes my way. Thank youuuuuuuu so much, you really are the best friend a girl could ask for!

I know Thanksgiving is not something we celebrate here in Australia but I’ll use any excuse to make a festive dessert!

You guys, these no-bake, DATE FREE pecan pie bites are next-level delicious, and celebrating or not you need them in your life because, yum!
 
Deliciously buttery shortbread encasing a lush & creamy, cinnamon spiked almond butter caramel, topped with a crisp & crunchy pecan crumble!

No-bake because the thought of baking pies intimidates the life out of me plus, I still have no idea how this new oven works.
Also, if you’re making a traditional Thanksgiving (or Christmas) feast your oven is working overtime cooking that glorious turkey and roasting all the veggies (don’t forget my Yorkshire puddings!!!) I don’t see how there’s room for pie?!
Plus all that rolling, kneading, resting, pre-baking, blind baking, filling, cooling . . . ain’t nobody got time for that!

Made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand already can be ready to devour in less than 30 minutes!!!

All the flavour, minus the fuss I am here for it!

Gluten free – Dairy free – Grain Free – DATE FREE Refined sugar Free Low carb Keto Paleo Vegan friendly.

Subtly sweet, deliciously buttery, perfectly spiced, seriously caramel-y, rum spiked, perfectly portioned pecan pie bites (because after all that feasting, 2 bites = perfect finisher) everybody got room for that!

Let the festive fun begin!!!!!!

1 bowl - No Bake {Date Free} Pecan Pie Bites

  • Prep Time: 20 mins
  • Persons: 12
  • Difficulty: Easy

  • Ingredients
  • For the shortbread base –
  • 1/4 cup coconut flour
  • 2 Tablespoons of coconut oil, melted
  • 2 Tablespoons of maple syrup* – I use sugar free/monk fruit maple
  • 1/2 teaspoon of vanilla
  • 1 pinch of salt
  • For the caramel filling –
  • 1/4 cup almond butter
  • 2 Tablespoons of coconut oil
  • 2 Tablespoons of maple syrup* – I use sugar free/monk fruit maple
  • 1/2 teaspoon of vanilla
  • 1/4 teaspoon of rum extract – or a shot or your fave rum/brandy
  • 1/4-1/2 teaspoon of cinnamon
  • A generous pinch of salt
  • For topping –
  • 1/4 cup pecans
  • *keto friends use monk fruit based maple syrup
  1. Instructions
  2. Fill a mini muffin tray with paper cases and set aside.
  3. Place all ingredients for the base into a small bowl and stir until well combined.
  4. Press shortbread base in to your prepared muffin tray and use your fingers or the back of a spoon to press down and smooth up the edges.
  5. Use your thumb (or any finger/utensil you like) to press an indent in to the centre for your caramel filling to sit
  6. Set aside.
  7. Place all ingredients for your caramel filling in to your bowl and stir until smooth, creamy and well combined.
  8. Spoon/pour your salted caramel filling in to your shortbread crust.
  9. Top with pecans, if you want then place in the freezer to set – should be ready in 10-15 minutes depending on size.
  10. Devour
  11. Note – Pies are best stored in an airtight container in the fridge (can also be frozen)
