So, who wants pie ?!
All the flavour, minus the fuss I am here for it!
I mean just look at that filling . . .
Gluten free – Dairy free – Grain Free – DATE FREE – Refined sugar Free – Low carb – Keto – Paleo – Vegan friendly.
Subtly sweet, deliciously buttery, perfectly spiced, seriously caramel-y, rum spiked, perfectly portioned pecan pie bites (because after all that feasting, 2 bites = perfect finisher) everybody got room for that!
Let the festive fun begin!!!!!!
1 bowl - No Bake {Date Free} Pecan Pie Bites
- Prep Time: 20 mins
- Persons: 12
- Difficulty: Easy
- Ingredients
- For the shortbread base –
- 1/4 cup coconut flour
- 2 Tablespoons of coconut oil, melted
- 2 Tablespoons of maple syrup* – I use sugar free/monk fruit maple
- 1/2 teaspoon of vanilla
- 1 pinch of salt
- For the caramel filling –
- 1/4 cup almond butter
- 2 Tablespoons of coconut oil
- 2 Tablespoons of maple syrup* – I use sugar free/monk fruit maple
- 1/2 teaspoon of vanilla
- 1/4 teaspoon of rum extract – or a shot or your fave rum/brandy
- 1/4-1/2 teaspoon of cinnamon
- A generous pinch of salt
- For topping –
- 1/4 cup pecans
- *keto friends use monk fruit based maple syrup
- Instructions
- Fill a mini muffin tray with paper cases and set aside.
- Place all ingredients for the base into a small bowl and stir until well combined.
- Press shortbread base in to your prepared muffin tray and use your fingers or the back of a spoon to press down and smooth up the edges.
- Use your thumb (or any finger/utensil you like) to press an indent in to the centre for your caramel filling to sit
- Set aside.
- Place all ingredients for your caramel filling in to your bowl and stir until smooth, creamy and well combined.
- Spoon/pour your salted caramel filling in to your shortbread crust.
- Top with pecans, if you want then place in the freezer to set – should be ready in 10-15 minutes depending on size.
- Devour
- Note – Pies are best stored in an airtight container in the fridge (can also be frozen)
