I really feel like so far this year our little family has been sick more than we have been well.
Seriously annoying!
So needless to say I have been sneaking a little extra garlic into our meals as often as I can.
Did you know Garlic is packed with antioxidants, and vitamin C which will help to give your your immune system a nice little boost. Garlic is also known to be a natural anti-inflammatory as well as having the benefits of being both anti-bacterial and anti-viral?
Yep, all true 🙂
Plus it’s just delicious. Especially when its roasted. Something magical happens when you roast garlic, it becomes less pungent and all kinds of amazing. Smoky, sweet and incredibly delicious.
Anyways, today I thought I would share with you one of my new fave side dishes.
Roasted garlic whipped cauliflower.
Yep, creamy, dreamy roasted garlic whipped cauliflower.
Seriously so good I can’t even tell you.
Poor old cauliflower gets a bit of a bad rep if you ask me. I personally love it, simply season with salt and pepper, tossed in a little coconut oil and oven roasted, ugh so good!
But this . . . roasted garlic whipped cauliflower takes it to a whole new level.
It’s quick and easy to prepare, low carb and high in fibre. This roasted garlic whipped cauliflower is also high in essential vitamins and minerals that our growing bodies need but most importantly, its down right delicious!
Cauliflower is softened in some stock then we simply add in some sweet, smoky oven roasted garlic, seasoned to taste with salt and pepper and whip it into a creamy, dreamy, sweet, smoky oblivion. Boomshakalocka, done!
Yep, it’s that easy!
Sprinkle over a little fresh parsley or coriander if your feeling fancy and serve it with alongside your steak, grilled chicken, meat loaf, veggie burger, tempeh or tofu or include it as part of your sunday roast.
PS – If you have yourself some cauli haters in the house, let them think its mashed potatoes . . . there is a very good chance they will die over its deliciousness and never know the difference. Your secret is safe with me mwahahaahaha

Creamy Roasted Garlic Whipped Cauliflower
Makes approx 1 cup of creamy, smoky, sweet garlic infused whipped cauliflowerIngredients –
1 1/2 cups of cauliflower, roughly chopped
1 cup of chicken stock (could sub for vegetable stock)
1 clove of roasted garlic
salt and pepper to taste
Method –
1 – Place stock and cauliflower into a small saucepan, cover and place over medium heat and bring to the boil.
2 – Turn heat to low and simmer until your cauliflower is just tender. You still want it to have a little bite to it
3 – Use a large spoon to transfer cauliflower into your blender or food processor.
4 – Add your roasted garlic, salt and pepper and blend/process until smooth and creamy.
5 – Taste and adjust seasoning to taste, add a teaspoon of your leftover stock (or even some milk) to reach your desired consistency.
6 – Serve with steak, chicken, fish, veggie burgers, meatloaf, anything and everything.
