BBQ chicken & green chilli meatloaf muffins

Alright party people Ima keep this short and sweet for you today because ain’t no point beating around the bush, it doesn’t matter what I say, ain’t much you can do to pretty up meatloaf . . .

Even saying meatloaf just sounds so . . . blah

Which is kind of a massive shame because meatloaf, especially this one we are making today is the complete opposite of blah!

Today we are making ourselves some tiny but mighty, succulent, sweet, spicy little BBQ chicken & green chilli meatloaf muffins.

Oh my deliciousness you guys . . .

These little meatloaf muffins pack a serious flavour punch!

They are succulent and juicy with a hint of sweetness from our BBQ sauce and a nice kick of spice from mr green chilli!

If you are not a fan of the good ol’ meatloaf firstly who are you and how are we friends again?! (← kidding 😉 ) But seriously please, please don’t run away. Give these babies a try because I am telling you, these BBQ chicken & green chilli meatloaf muffins are a total game changer!

Let me just tell you a few reasons why I love these delicious little BBQ chicken & green chilli meatloaf muffins so much.

They are so quick and easy to prepare, made with just a handful of ingredients that I bet you have on hand already, they are super cheap and totally convenient but, they also happen to be seriously healthy and all kinds of delicious.

An added bonus to these succulent, juicy, spicy suh-sweet little BBQ chicken & green chilli meatloaf muffins is that –

1 –  They come together in less than 30 mins! And, I don’t have to bother with slicing up that badboy. Meatloaf, although hearty and delicious can also be kind of delicate when it comes to slicing and has a tendency to crumble and fall apart . . . well not when you make it into muffins it doesn’t. Boomshakloacka, winning!!!!!!!

2 – Hello perfectly portioned and seriously convenient! Ready to grab and go baby. Pack them into lunch boxes or have them pre-cooked, wrapped in some foil and frozen for those nights when you want some serious comfort food without having to actually cook anything. Just Grab them out of the freezer and throw them in the oven for 20 mins and dinner is done baby!

And FYI – if you have little ones at home or you or someone you love is not a big fan of chilli you could simply leave it out and have some BBQ chicken meatloaf muffins and they would still be all kinds of delicious!

Simple, healthy, homemade deliciousness right there. They may not be pretty but they sure tastes good!

BBQ chicken & green chilli meatloaf muffins

BBQ Chicken & Green Chilli Meatloaf Muffins
Makes 6 smoky, sweet, spicy little meatloaf muffins

Ingredients –

250g chicken breast mince – aka ground chicken (could sub beef/pork/lamb/turkey)

1 small green capsicum, finely chopped

1 green chilli finely chopped (more or less to taste – with or without the seeds depending on how fiery you like things)

1 small red onion, finely chopped

1 egg white

1/4 cup bread crumbs ( 1/4 cup  bread crumbs – I like to make my own with this almond and linseed gluten free/paleo bread made by Venerdi Bread but any kind will work – you could sub almond meal or a few Tablespoons of coconut flour or chia/flaxseeds for my paleo friends)

2 Tablespoons of BBQ sauce sauce + 1 Tablespoon for spreading over the top of each muffin before cooking

1/2 teaspoon of garlic powder

salt and pepper to taste

Method –

1 – Preheat oven to 175’C (350’F) and line a 6 cup muffin tray with paper cases or baking/parchment paper and set aside.

2 – Combine chicken, capsicum, chilli, onion, bread crumbs,  2 Tbsp tomato sauce, egg white, garlic powder and salt and pepper and stir to combined.

3 – Divide mixture evenly between your muffin cups (I used approx 1 heaping 1/4 cup measure per muffin)

4 – Spread the top of each muffin with 1 teaspoon of your remaining BBQ sauce and bake for 25-30 mins until cooked through.

5 – Serve with a little extra  drizzle of BBQ sauce, along with a few extra slices of chilli

Serve with your favourite veg or a simple salad, some oven baked sweet potato fries, or some of this roasted garlic whipped cauliflower and you have yourself one winning dinner (even if I do say so myself)
