It appears I have gone and got myself a bit of a salted caramel and coconut obsession . . .

Ever since we made those delicious little salted caramel coconut bliss bites a few weeks ago I have been trying to come with new ways to get more blissful bites of salted caramel deliciousness into my life our lives . . .

To be honest I had a hard time because, how can you improve on something as delicious as soft, chewy, secretly healthy caramel infused bliss bites that have a delicately sweet and coconutty outer coating . . .

And then it hit me . . .

Ladies and gentlemen I do believe we have ourselves a winner.

I know, I know what your going to say . . .

Em, you say that every single time you post a new energy bite recipe – seriously, enough already?!

And you’re right, I totally do but this time I do believe I have outdone myself.

Is it ok that I just said that?

I hope so?!

If not one bite of one of these salted caramel, dark chocolate coconut bliss bites and all will be forgiven I am sure . . .

Salted Caramel Choc Chip Coconut Bliss Bites {Vegan & Paleo Friendly}

Crispy, crunchy, subtly sweet, flakes of delicate, nutty coconut encase a blissfully soft, chewy caramel centre that is studded with dark and dreamy bites of antioxidant rich, dark chocolate . . .

I have no words.

As always our bliss/energy bites are all natural, made with just a handful of ingredients that I bet you have on hand already and they come together in a matter of minutes.

5 mins to assemble your ingredients, 5 mins to blend into a delicious “dough”, 5 mins to roll and coat in sweet, crunchy, coconutty deliciousness and then you get to devour the entire batch in one sitting delight in your very own, all natural, secretly healthy, salted caramel, dark chocolate, coconut bliss bite.

Simply bust out your trusty old food processor or blender, throw in your ingredients and you are as good as done.

Magical medjool dates are combined with buttery cashews to make our delicious little bliss bite base.

Then, we add in a splash of vanilla and a good pinch of salt, FYI – the salt just helps to balance out the natural sweetness or our caramel base and it also enhances the richness of those dreamy little dark chocolate chips so don’t be concerned that they will taste salty because they really don’t. Promise.

Last but not least we coat those delicious little caramel infused choc chip studded bliss bites  in some subtly sweet, slightly crispy, delicate flakes of finely shredded coconut which not only adds an incredible contrast in flavour, it also adds a nice contrast in texture which I just adore.

Light, crispy, crunchy flakes of finely shredded coconut encase soft and chewy, chocolate studded bites of secretly healthy, caramel infused deliciousness.

Well they are . . . providing you choose the appropriate choc chips of course 😉 you really do need them in your life . . . like yesterday . . .

Salted Caramel Choc Chip Coconut Bliss Bites {Vegan & Paleo Friendly}

Salted Caramel Dark Chocolate & Coconut Bliss Bites {Vegan & Paleo Friendly}
Makes approx 40 all natural, secretly healthy, caramel infused, coconut cocoated, choc chip studded bites of deliciousness

Ingredients –

1 cup cashews (I used raw, unsalted)
6 medjool dates, pits removed
1 teaspoon of vanilla extract
1-2 Tablespoons of dark chocolate chips roughly chopped
a generous pinch of salt flakes
1/4 cup of finely shredded coconut for coating.

Method –

1 – Place cashews in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.
2 – Add dates and pules until the mixture starts to come together into a sticky, loose “dough”.
3 – Add vanilla extract and salt flakes and pulse again until combined.
4 – Add your roughly chopped choc chip and pulse again until just combined. You could also just stir them through by hand if you prefer, either/or both work 🙂

5 – Using your hands, roll approx 1 heaping teaspoon of dough into little bite size balls then set aside
6 – Place your coconut into a small bowl (or even just a zip lock bag) then gently roll your bliss bites in the coconut gently but firmly pressing to make sure to coconut sticks to your bite.
7 – Once your bites have a delicious little coconut coating, transfer directly to your mouth an airtight container (or even just a ziplock bag) and store in the fridge
