You guys . . . I wish I had some kind of funny story or anecdote to tell you but I got nothin’

I’m so boring!

But this Peanut Butter, Cocoa and Cranberry Granola . . .

so not boring people. Not even a little bit.

Crunchy oats, clustered with chocolatey, peanut buttery goodness sprinkled with sweet dried cranberries.

I can’t even deal!

Even before I put the granola in the oven, standing, stirring the mixture I knew I was onto a winner (even if I do say so myself). The smell was unbelievable! Like I may or may not have sat myself down on the kitchen floor and consumed the entire bowl. Maybe I did and this was batch number 2 . . .

Maybe . . .

Eat it simply by the handful or . . . be a little more dignified and grab a bowl

pour on some ice cold milk

and enjoy with a spoon, possibly sitting in a chair, not on the kitchen floor . . .

PS – this my friends is also seriously healthy but no one will ever know!

PPS – it’s also ah-mazing served with ice cream or frozen yoghurt.

So not boring!

Peanut Butter, Cocoa and Cranberry Granola
Makes about 5 cups

Ingredients –

3 cups old fashioned rolled oats (not quick oats)

2 Tbsp cocoa powder

1/4 cup maple syrup

1/4 cup peanut butter (homemade or store bought, smooth or crunchy either will work)

1/4 cup warm water

1 tsp vanilla extract

1/3 cup dried cranberries

Method –

Preheat oven to 160’C (320’F)

In a small bowl or jug combine peanut butter, maple syrup, water and vanilla then stir until well combined.

In a medium bowl combine oats and cocoa powder, then pour in peanut butter/vanilla mix and stir until well combined.

Pour oats onto a rimmed baking sheet lined with parchment paper and bake for 15-20 mins stirring occasionally until slightly crunchy. Remember that it will get even more crunchy as it cools. Watch it in the last 5 mins to ensure it doesn’t burn.

While the oats are baking chop up your cranberries. Once the oats are cooked, stir in the cranberries and allow to cool on the baking sheet.

Store in an air tight container.
