I can’t even believe I feel like I’m getting sick again

So not happy!
My body is aching, I can’t sleep , I’m hot, I’m cold . . . blah, blah enough already!
Brace yourself people . . . incoming smoothie, garlic and other antioxidant rich recipes coming your way.
Today our test it out tuesday recipe is one from non other than the supremely talented Joy the Baker and her wonderful Joy the Baker Cookbook. Do you guys know Joy?
She is one super cool little lady. I just love, love, love her. If you follow along with the wonderful Joy (and you totally should) you will know that she has a way with food, photography and well just words in general Girlfriend got skills yo! Her talent truly is inspiring.
Anyways, if you follow along with Joy you will know she is hard at work on her next cookbook. Which I am beyond excited about. Except for the fact that there are so many things in her first cookbook that I have yet to make! I know, I know what you’re thinking . . . “poor form Em, you’ve let the team down on this one” you’re totally right and I’m seriously sorry . . .
So . . . let’s get to work . . .
Being a little under the weather and all I figured I would start out simply with her green smoothie because well, you know how I am with smoothies, and until last week I had never had a green smoothie. I know it’s a big call to deem my first green smoothie my fave but one taste and I’m sure you will agree.
I was a little nervous about it, don’t get me wrong I love me some spinach but usually in something . . . you know like pesto, a quesadilla, or simply panfried with a little garlic and lemon . . . but in a smoothie . . . not sure about this whole “drink yo greens thing”. But it’s good for me and I totally trust Joy so green smoothie it is . . .
Let me tell you I did not taste spinach at all. Not even a hint of it. I was expecting a little something . . . bitterness maybe? All I got was an all kinds of delicious, light, refreshing, smooth and creamy smoothie with a subtle sweetness from the banana and maple syrup and a hint of nuttiness from the peanut butter.
It really was delicious.
You need one.
Perfect for your pre/post workout snack, or to help restore your “inner balance” if you’ve had one to many treats over the weekend, or if like me, you feel yourself fighting (yet another) cold/flu
One taste and you will feel fitter, healthier and more energised . . . and a little like your cheating because something that tastes this good isn’t usually this good for you!

My Fave Green Smoothie
Slightly adapted from Joy the Baker Cookbook
Makes 1 large or 2 small gorgeous green good for you smoothiesIngredients –
1 cup spinach leaves, washed and dried
1/2 banana (preferably frozen and pre-sliced but fresh will work just fine)
1/2 cup milk of choice (skim, regular, almond, coconut etc)
1/4 cup plain Greek Yogurt (I use Chobani)
1 teaspoon of maple syrup – the real stuff
1-2 teaspoons of peanut butter (PB2 * works here too)
1 cup of ice
Optional – 1/2 teaspoon of Xanthan Gum (gluten free natural thicken agent that will result in an thicker smoothie and can be found ion the health food section of your local supermarket)
Method –
1 – Place all ingredients into your blender and process until smooth and creamy. Taste and add milk/water/ice/sweeteners to taste
