Oh you guys I am so sorry for skipping out on you last week.

I know, I know I was totally MIA and I really am sorry but after being hit with some super fun (not) stomach bug I was down for the count!

Then we had parent teacher meetings, birthday parties, martial arts grading complete with (extremely drawn out) belt promotion ceremonies for our little ninja who then got hit with another nasty cold on top of the general business that is, well, life!!

As much as I wanted to get on here and share some new, deliciously simple recipes with you I just could not find the time!

I really am sorry.

All you need to get in on this deliciousness is just a cup of fresh and juicy magical medjool dates, a splash of vanilla and a pinch of salt!

That’s it!

Ok seriously though, you may already know about the wonder that is date caramel and in true Em form I’m totally late to the party but, better late than never right?

So, a couple of things before we get started . . .

1 – For best results you want your dates to be super fresh, plump, juicy and dare I say moist?! If you find your dates are a little dry, try soaking them in some warm water for 10 minutes before you begin, to help reconstitute and freshen then up a little, then drain and rinse and proceed with the recipe as normal.

2 – I know I say it’s a 2 minute caramel and it really is that quick and easy to make but, the time it takes for your caramel to come together will depend on the power of your food processor or blender. I made my caramel in my beloved belndtec blender (which I absolutely love, love, love and highly, HIGHLY recommend) and my caramel came together in just one cycle which is 49 seconds so just something for you to keep in mind.

Healthy, Homemade 2 Minute Salted Caramel {Vegan, Gluten Free & Paleo Friendly}

Makes approximately 3/4 cup of all natural, quick and easy, creamy, dreamy, deliciously simple, healthy, homemade salted caramel

Ingredients –

1 cup (firmly packed) Medjool dates,pits removed – I used about 14 large dates*

1 teaspoon of vanilla extract

1-2 Tablespoons of warm water

1/2 teaspoon of salt flakes

Method –

1 – Place all dates, vanilla and salt into your food processor or blender and process until it started to break down and form a thick sticky mass/paste

2 – While your blender or food processor is running, add water 1 teaspoon at a time until the caramel loosens slightly and forms deliciously smooth, gloriously golden, naturally sweet salted caramel.

2 – Store covered or in an air tight container in the fridge – it should keep well for up to 2 weeks, possibly longer, but I highly doubt it will last that long.
