We have said goodbye to our big beautiful Christmas tree along with all those bight, shiny, glittering decorations, sadly packed them all away for another year.

Although, in our house I guess we just aren’t quiet ready to let the holidays go completely.

Heathy, No-Bake, Double Chocolate Ginger Energy Bites.

All that incredible holiday flavour rolled into one tiny but mighty chewy, chocolatey, ginger infused little bite of energy giving deliciousness.

These Double Chocolate Ginger Energy Bites are super simple to make and even easier to eat.

Firstly you get a smooth, dreamy, rich chocolate flavour which seems to be slightly intensified when combined with the natural sweetness of the medjool dates. Then you get a nice little hum of heart warming cinnamon followed by a sweet yet subtle kick of ginger.

Although these delicious little Double Chocolate Ginger Energy Bites have all my fave holiday flavours rolled into one delicious little bite when you think about it, they really are the perfect little snack for this, fresh start/new beginnings, cleaner eating time of year.

What more can I say, delicious, all natural, healthy, no-bake Double Chocolate Gingerbread Energy Bites that hold all those incredible healing/health benefits . . .

Serve them with a big ol’ glass of ice cold milk, you know you wanna

Double Chocolate Ginger Energy Bites
Makes approx 45 bites of all natural, double chocolate, gingerlicious super bites

Ingredients –

1 cup raw almonds

3/4 cup pitted dates, about 6 – I used medjool

2 Tablespoons of cocoa powder – I use Hershey’s Special Dark

2 teaspoons of vanilla extract

1/2 a heaping teaspoon of ground cinnamon

1/8 teaspoon of ground nutmeg

1 Tablespoon of crystallised ginger, finely chopped (more or less to taste deepening on how gingery you like things)

1-2 Tablespoons of dark chocolate chips, roughly chopped

Method –

1 – Place almonds in your food processor/blender and process until nice and fine. Remember as always you want there to still be a few little “chunks” to give the bites some texture.

2 – Add dates and process until the mixture starts to come together to form a nice sticky “dough”.

3 – Add cocoa powder, vanilla, cinnamon and nutmeg then process again until combined.

4 – Lastly throw in your chocolate chips and crystallised ginger and process until just combined.

5 – Using your hands, roll approx 1 heaping teaspoon of the mixture into delicious bite size little pieces then transfer directly to your mouth to an airtight container (or even just a ziplock bag) and store in the fridge until you’re ready to enjoy.
