So it’s Valentine’s Day on Sunday, did you know?!

I knew it was coming but for some reason I thought I had an extra week?!

Please tell me that I am not the only one who on occasion, somehow, mysteriously manages to lose solid blocks of time (minutes-hours-days-weeks) ?

Especially when it comes to holidays and special occasions?!

I honestly have no idea how it happens, but it does.

At least to me . . .

Anyway, here we are . . . Valentine’s day is just around the corner and even though it’s totally last minute I couldn’t let this occasion come and go without sharing some kind of chocolate covered creation with you.

1 – because I just love chocolate (who doesn’t?!) and

2 – did I mention that I love chocolate?!

I was talking to my sister about it today, as you do, trying to figure out which kind of chocolate I like the most . . .

Plain milk or dark chocolate?

Salted caramel?

Chocolate & some kind of berry?

Or mint?

Or orange?

Or lemon?

Or coconut?

Or some kind of fruit and nut combo?

It’s a tough, tough call . . .  there are just so many variables?!

I definitely prefer dark chocolate over milk but the rest really just depends on my mood . . .

That being said, nothing screams love-romance-Valentine’s day like the classic combination of chocolate and strawberry am I right?

So, in honor of Valentine’s day I thought it might be fun if we made some quick and easy, deliciously indulgent dark chocolate strawberry bark.

And yes that really is my idea of fun.

This “recipe” is oh so easy (like so easy I’m almost a little embarrassed to call it a recipe) and comes together in a matter of minutes (in talking less than 10) and requires just 2 ingredients that I bet you have on hand already and, depending on what kind of chocolate you use can also be sugar-free, vegan, and paleo friendly.

So simple but so delicious I know you guys are going to love, love, love it!

Crispy shards of deliciously indulgent, creamy, dreamy, strawberry infused dark chocolate  . . . I mean, what’s not to love?!

Here’s how we make it –

Simply melt down some good quality dark chocolate, stir through a splash of strawberry extract and you’re pretty much done.

Once we have created our creamy, dreamy, strawberry scented pool of deliciously melted dark chocolate, all that’s left to do is spread it onto a lined baking sheet and depending on how you’re feeling you can just pop it into the fridge (or freezer) for 5 minutes to set and be done . . .

Or . . .

because you know that I’ll take any excuse I can to bust out the sprinkles . . .

And add a splash of pink (yes I am that girl) . . .

Even though it’s totally unnecessary . . . I highly recommend that you crumble up a handful freeze dried strawberries and sprinkle them, along with some kind of fun and festive heart shaped sprinkles, into your creamy, dreamy, decadent and rich, strawberry infused sheet of deliciously melted dark chocolate and then pop that bad boy into the freezer to set.

Once it’s set simply chop into delicious little shards and you are go to go.

Wrap it up in a pretty little bow and share it with the ones you love . . . or just keep it for yourself . . .

All natural, quick and easy, decadent and rich, strawberry infused dark chocolate bark that requires just 2 ingredients and comes together in a matter of minutes;

Dark Chocolate Strawberry Bark {Vegan & Paleo Friendly}

Ingredients –

1/2 cup of good quality dark chocolate

1/4 teaspoon of strawberry extract

Optional but recommended for serving –

Freeze dried strawberries, crumbled sprinkled

Edible heart shaped sprinkles

Method –

1 – Line a rimmed baking sheet with baking/parchment paper (or a silpat mat if you have one) and set aside

2 – Melt your chocolate by your preferred method. I like to place my chocolate onto a small plate or bowl and sit it over a pot of gently simmering water, stirring occasionally until nice and melted.

3 – Once your chocolate is melted, add your strawberry extract and stir to combine.

4 – Carefully pour your deliciously melted, strawberry scented chocolate onto your prepared baking sheet. Use the back of a spoon or spatula to smooth out the chocolate into one deliciously thin layer.

4 – Crumble over your freeze dried strawberries and sprinkles (if using) then pop the tray into the fridge (or freezer) to set.

5 – Once set, using a sharp knife cut your decadent and festive sheet of strawberry infused dark chocolate bark into delicious little shards.

6 – Store in the fridge (or freezer) in an airtight container.

    Great recipe! You inspired me to make bark! I made mine a little different because my husband doesn’t like strawberries. I melted dark chocolate with caramel and then after I spread it out I added some crushed pecans and sea salt. It was delicious! Thank you for the post! It was easy and oh so good 😊
