Fully loaded BBQ Ranch Baked Potatoes

If you’re looking for a quick and easy, fuss-free but insanely delicious meal (that the whole family will LOVE – umm aren’t we all?! ) then look no further friends!

These fully loaded BBQ ranch baked potatoes are EXACTLY what you need!

Super simple, seriously flavorful & even if you have to make them from scratch, they can be on the table ready to devour in around than 30 mins, happily devoured by all, always!

Gluten Free – Dairy free – Sugar free – Grain Free – Paleo – 100% whole 30 compliant –   + Keto  & Vegan options! It really is for everyone!!!

Minimum effort, maximum flavor is what I’m alllllll about!

BBQ Ranch Baked Potatoes

Makes 4

4 lge potatoes – I used Mitolo Family Farms Gourmandine Potatoes (which I just buy at coles) they are hands down the most lux potatoes Ive ever had! Keto/low carb friends can sub the low carb Carisma Potatoes – not quite as lux but still delish or just use lettuce cups #youdoyou ♥
2 C cooked chicken, shredded
1/2 C BBQ sauce – recipe below
1-2 green chilies- more or less to taste

Sauce –
4 Tbsp Tomato paste
2 Tbsp apple cider vinegar
2 tsp dijon mustard
4 Tbsp maple syrup
1 tsp smoked paprika
1/2 C coconut aminos
(at least) 4 cloves of garlic, crushed
Pch each cinnamon &  cloves
S & P to taste

Crema –

1/2 lge avocado
1 Tbsp plain greek style yogurt
1 Tbsp good quality mayo – I use Gevity RX – it’s sugar free, egg free, boosted with bone broth (so its great for hair, skin, nails & gut healing goodness) – if you havent tried it yet, you must! I guarentee it will change your life! EMS10 = 10 % off
1/2 tsp each of garlic pws, onion pwd & dried dill – more or less to taste
Sqz lime
S & P to taste

To serve –

Shredded cabbage
Coriander

Method –

1 – Toss taters in coconut oil, pierce w/ a fork & bake @ 180-‘C / 350″f for 30-40 til golden, crisp and cooked through.

2 – While your taters are baking make our sauce – just stir it all over medium heat & simmer for 2-3 mins til thickened & slightly reduced .

3 – Once cooked, slice in half then roughly mash & flatten the middle then press gently to make a nest for your filling.

4 –Toss chicken + BBQ sauce & chili.

5 – Load up your taters. drizzle w/ crema, finish with coriander.
