Chocolate Chocolate Chip Pancakes

Fluffy chocolate pancakes with random bites of teeny, tiny, ooey, gooey melted chocolate chips . . . yep . . . totally went there.

Seriously, these pancakes are so light, so fluffy, so indulgent, so, so chocolately.

The only thing that makes them better is that they can be ready in 5 mins flat.

No lie!

Make some, eat some . . . you totally deserve it.

Chocolate Chocolate Chip Pancakes
Makes approx 14 pancakes

Ingredients -

3/4 cup Plain Flour
1/4 cup cocoa powder
1 tsp Instant Coffee
1 tsp baking powder
1/2 tsp baking soda
1 cup milk
1 egg
1 tsp Vanilla
1 Tbsp Chocolate Chips

To Serve -

Ice cream
Balsamic roasted strawberries

Method -

Sift flour, cocoa, coffe granules, salt flakes, baking soda and baking powder into a medium size bowl.

Add milk,

egg and vanilla and whisk to combine.

Add chocolate chips and stir to combine.

Heat a fry pan over medium heat and pour batter into the pan (I used approx 1/4 cup for each pancake). Cook until edges look “dry” and bubbles are forming on the top. Flip and cook for another minute.

Stack and repeat until all batter has been used.

Top with a big scoop if vanilla ice cream and some balsamic roasted strawberries.

Close your eyes and enjoy . . . bliss :)
