It’s no secret how much I love breakfast!

Like seriously love it!

Sometimes I go to bed early just so breakfast time can hurry up and get here already!

One of the things I adore about breakfast is that it is probably the one meal you can get away with eating anytime of day. No questions asked.

We’ve all been there right? Breakfast for dinner = dinner winner?!

And breakfast can really be whatever you want it to be, sweet, savoury, hot cold, sitting, standing, in bed, on the go you name it, anything goes!

And right now I am seriously loving this granola!

It’s crispy, crunchy and subtly sweet with a few of those divine, extra crispy little clusters we all hunt for scattered throughout ♥

This granola is made with just a handful of ingredients and has no refined sugars added, sweetened naturally with a little vanilla extract and some maple syrup.

I used just one tiny teaspoon of coconut oil to help give this granola a little extra crunch, that combined with the crispy, crunchy, buttery, nuttiness of those maple coated roasted almonds . . . I can’t even, so good!

One of my favourite ways to eat this granola is simply sprinkled onto of a cup of Greek yoghurt,

with a few fresh berries,

and a drizzle of maple syrup!

Or you could simply eat it by the handful, throw some into your smoothie or sprinkle it over your weekend waffle stack either way you can’t really go wrong! Breakfast, snack time, anytime.

Make it, eat it, love it

Maple Almond Granola
Makes approx 2 and 1/4 cups of insanely delicious crispy, crunchy granola maple almond granola

Ingredients –

2 cups of rolled oats

2 Tablespoons of maple syrup

1 teaspoon of coconut oil, melted and cooled

1 teaspoon of vanilla extract

1/8 cup of raw almonds, roughly chopped.

1/4 teaspoon of ground cinnamon

A pinch of salt flakes

Method –

1 – Preheat your oven to 160’C (320’F) and line a rimmed baking sheet with parchment/baking paper and set aside.

2 – Place oats, almonds, cinnamon and salt in a medium size bowl and stir to combine, set aside.

3 – In a small bowl or jug combine coconut oil, vanilla extract and maple syrup then stir to combine.

4 – Pour your maple, vanilla mixture into your oats and stir until well combined

5 – Pour the oat mixture onto your prepared baking sheet and spread out into one even layer.

6 – Bake for 12-15 mins stirring occasionally until your granola is golden, crisp and smelling all kinds of incredible. Remember that the granola will crisp up more as it cools.

7 – Eat by the handful, with ice cold milk, (or warm if your into that kind of thing) or my personal fave over a cup full of Greek yoghurt with a some fresh raspberries and a drizzle of maple syrup (the real stuff please)
