So I thought it was about time we got to know each other a little better . . . here are a few things you should know about me . . .
– I can’t stop roasting vegetables. It’s happening every. single. day! A delicious problem to have I guess. Wanna come over?
– I am currently addicted to painting my nails, it makes me feel glamorous
– I love, love, love to go grocery shopping . . . and totally check out what the people around me are putting in their shopping cart.
– Come 10pm I can not keep my eyes open. No matter how hard I try. Then I’m awake at 530 am . . . I’m really 80 years old . . .
– No matter how many times I do it, every time I work with chillies I always, always rub my eyes before I have washed my hands properly . . . will I never learn?
– I have old lady hands . . . please disregard them ↑
– I like to eat pizza with a knife and fork
– I love watching the biggest loser . . . and somehow always manage to do so with a giant bowl of ice cream. Every. Single. Time.
– I cant eat pancakes or banana bread the day they are made. Well I can, (← and do) but totally prefer them the following day.
– Speaking of pancakes . . . unlike pizza I prefer to eat them with my hands . . . and am current stuck in the midst of a month long pancake obsession. Evidence here, here and here (recipes coming soon)
– I burn toast . . . a lot
– I love to sit with my balcony and windows wide open, even if its freezing and I have to put on a warm jumper, and my ugg boots, and get a blanket and make hot chocolate just to keep warm. Just quietly, I think spunky husband thinks/knows I’m slightly insane (?!)
– When I eat yoghurt (which is every. single. day!) I like it to be super cold, so I put it in the freezer for 20 mins before I eat it. Same goes for the milk I pour over my cereal in the mornings . . .
. . . And this my friends is my all time (current) fave toasted sandwich.
Oven roasted vegetables and a slice of yummy cheese smashed between two slices of super soft wholemeal bread. Seriously its like heaven. If heaven tastes kinda like pizza . . . if pizza was a toasted samich . . .
With all the crazy rain we have been having it totally felt like winter and well winter means toasties so here you go my friends. Something simple that is close to my heart, I made this one to share with you . . . you know because your close to my heart too. Much love invisible internet friends, much, much love ♥
Our Fave Roasted Vegetable Toastie
Makes 1 delicious toastieIngredients –
2 slices of your fave bread
1 slice of cheese
1 cup of roasted vegetables
salt and pepper to taste
Method –
1 – Preheat your toasted sandwich maker/panini press/skillet
2 – Layer your slice of cheese onto one piece of bread.
3 – Squeeze the flesh out of one of your cloves of roasted garlic, and spread over the second slice of your fave bread.
4 – Top cheese with your roasted vegetables then place the second piece of bread, garlic smear down, on top of your pile of veg and toast until the vegetables are heated through and cheese is all oozy, gooey and deliciously melted.
5 – Slice, serve and enjoy . . . FYI you may want to let it cool for a minute or 2 before you devour, freshly toasted, oozy gooey cheesey goodness tends to be a leetle hot . . . aka you may burn your mouth if you dive right in . . . not that I would know anything about that . . . Ok I totally do, it hurts. You have been warned.
