This weeks “test it out tuesday” is brought to you once again from the delicious pages of The Pioneer Woman Cooks – Food from My Frontier.

On Sunday we celebrated fathers day.

For those of you who follow me on Instagram will know that the day kicked off with our latest breakfast obsession. So, I wanted to make my cheese lovin‘ husband something a little special for lunch . . . enter Ree the pioneer woman wearing her sparkly super hero type cape bearing “the best grilled cheese ever”.

I know what your thinking . . . if you’ve had one grilled cheese you’ve had them all . . . how different can they be right?

Wrong!

One bite from this sandwich and I knew we had a winner. Like no other sandwich consumed before it.

“Oh this is ridiculous!”

The only words that were spoken after the initial tasting, until it had been demolished finished. Then all that followed was a quiet, almost whispered, super polite request . . .  “is there any more?”

Yes my friends there is a new favourite sandwich on the block . . . The Ultimate Grilled Cheese . . . with Ham.

Ooey gooey melted cheese, fresh tomato, sweet onion, add a few chargrilled chilies, some toasty bread and add a few slices of ham just for good measure. In all honesty I think its got to be the special sauce . . . the mayo/mustard combo that takes this sandwich over the edge.

Ultimate Grilled Cheese with Ham
Slightly adapted and re-written from The Pioneer Woman Cooks – Food from my Frontier
Makes 4 servings

Ingredients –

2 green chillies
1/4 cup white vinegar
1/2 red onion, thinly sliced
1/4 cup Dijon mustard
1/4 cup mayonnaise (I use kraft 97% fat free)
8 slices of bread (I use Sonoma miche/wholemeal sourdough)
8 slices of cheese (I use coon light and tasty)
2 ripe tomatoes, thinly sliced
100g shaved leg ham (I use KR Castlemaine)

Method –

1 – Begin by roasting your chilies until the skin is charred.

2 – When your chiles are totally charred, put them in a bowl.

3 – Cover tightly with plastic wrap and let them sit in the bowl and steam for a while (you could just throw them in a ziplock bag instead . . . whateves)

4 – Next, pour the white vinegar over the sliced red onion and let them sit a while. This will take away some of the crazy onion taste and leave them with a nice sweetness.

5 – Finally, make the special sauce: Equal amounts of mayo and Dijon. Divine!

6 – When your ready to make your sandwich, scraped the blackened skin off the chilies. Scrape out the seeds so all your left with are big pieces of roasted green chilies.

7 – For each sandwich generously spread 2 pieces of bread with our special mayo/Dijon sauce.

8 – Lay on 2 slices of cheese, a couple of slices of tomato and 1/4 of the ham . . .

9 – Next, add a nice layer of green chilies

10 – A few of the red onion slices . . .

11 – Top with the other slice of bread . . .

12 – Toast your little sandwich in a sandwich press, or in a skillet/fry pan over medium-low heat until the cheese is thoroughly melted.

Ridiculous is right!
