For those who follow along on Facebook or Instagram you already know how obsessed I am with this delicious little side dish.

It’s one that we eat a lot in our house, I’m talking at least once a week, and have done for quite some time now.

It goes perfectly with just about any protein that your pretty little heart desires although to be honest, I could eat a big ol’ bowlful all on it’s own.

Just give me some carrot sticks and maybe some crisp and crunchy snap peas for dipping and I’d be one very happy lady!

The natural sweetness of that nutrient rich, incredibly vibrant, pumpkin and sweet potato combined with the subtly smokiness of our deliciously caramelized, magical, mellowed out, oven roasted garlic , a gentle hint of nuttiness thanks to a cheeky drizzle of coconut oil along with a generous pinch of salt and some freshly ground black pepper is an absolute taste sensation!

I absolutely adore roasting garlic, it’s something I make sure I have on hand at all times. It’s such an easy way to add a tonne of flavor to just about anything.

I don’t really know what it is or how or why it happens but something truly magical occurs when you roast garlic.

When you roast garlic it looses that strong, punchy, pungent flavor. It kind of mellows out and gets beautifully caramelized developing a slightly smoky, almost sweet, outrageously delicious depth of flavor that will absolutely rock your world!

Apparently it also eliminates that slightly problematic, pesky, lingering garlic breath too!

Not that I would let something like that stop me, seriously this roasted garlic, pumpkin and sweet potato mash would be worth any kind of isolation that may result should people be offended by such things as garlic breath.

Roasted Garlic, Pumpkin & Sweet Potato Mash {Vegan, Gluten Free & Paleo Friendly}
Makes approx 2 cups of deliciously simple, garlic infused, smoky, pumpkin and sweet potato  mash.

Ingredients –

1 cup of cooked sweet potato, firmly packed

1 cup of cooked pumpkin, firmly packed

1 head of roasted garlic

1 Tablespoon of coconut oil, melted and cooled

A generous pinch of salt and pepper – to taste

Method –

You have 2 options . . . to make your deliciously simple mash . . .

1 – You can throw everything into a bowl and mash it by hand or

2 – You can throw everything into your food processor or blender and let it do the work for you.

I generally take option #2 so my mash is silky smooth but either way will work.

However you want to do it simply –

1 – Place pumpkin and sweet potato into your food processor/blender or a medium size bowl.

2 – Squeeze the deliciously caramelized flesh from each clove of that magical bulb (or is it head?!) of oven roasted garlic into your pumpkin and sweet potato mix.

3 – Add coconut oil, salt and pepper and then process or mash until silky smooth and well combined.
