So I don’t know about how things are in your part of the world but here in good ol’ sydney town . . . the weather be crazy!

So. Much. Rain!

Like really, so much rain! It’s making people act all crazy up in here.

Not just here in my house where the confinement that comes from such insane weather has seen the stir crazy, rainy, day silliness well and truly set in. But I’m talking on the rare occasion we venture out into the chaos that has become the big wide world . . . people be cray cray!

I mean it’s just rain people. Yes, granted it has been a significant amount of rain but dude . . . let your fellow driver at least get out of their parking space before you try to nudge you way in. I see you there girlfriend, I ain’t stealing your spot so callllllmmmm down! And it’s ok if your car gets wet in the rain, they are built to take it, no need to drive so fast. I mean hurrying like that ain’t going to do you any favours. Although being overly cautious isn’t going to help you either. Keep it together people.

And you, person who thinks its totally ok and safe to scoot across the traffic, between cars, to escape the pouring rain. This is never a good idea. Ever. Especially when you clearly are not young or agile enough to pull off said speed scooting through the traffic. Seriously people, come on?!

So, in light of the insanity going on in the outside world I decided to stay safe in the insanity of my own home and roast us some vegetables!

Oh you guys roasting veg is the best! Seriously! So easy too, I mean apart from the chopping you really don’t have to do any work. Chop, season, roast and inhale. And so versatile. You can use whatever you have on hand and roasting those babies will turn them into something out of this world delicious. Your kitchen will smell amazing and then you will have a party in your mouth and your belly will be oh so grateful. Everybody loves a grateful belly right?!

Not to mention all that roasted garlic and the antioxidants in the vegetables will totally keep you from getting sick in all this  crazy rainy winter weather. You’re welcome.

So, this week our “test it out tuesday” recipe is inspired by this recipe from none other than the truly gifted genius that is Jamie Oliver (obsessed much?!). This combination of flavours smells and tastes like pizza. For reals. The sweet, smoky combination is truly incredible. I highly recommend you grab yourself a big ol’ bowl, sprinkle over a little feta cheese, snuggle under a blanket and stay safe in the cozy deliciousness of these roasted veg.

Oven Roasted Vegetables
Slightly adapted by this recipe from the one and only Jamie Oliver
Makes about 5 cups

Ingredients –

1/2 red capsicum/pepper, sliced

1/2 a green capsicum/pepper, sliced

1/2 an eggplant, sliced and quartered

1 zucchini, sliced

1/2 cup mini roma tomatoes

1 small sweet potato, sliced

1 onion, chopped into quarters

4 cloves of garlic, whole

1 teaspoon of ghee (or cooking fat of choice)

1 teaspoon of coriander seeds

1/2 teaspoon dried oregano

1/2 teaspoon of dried thyme

salt and pepper to taste

Method –

1 – Preheat oven to 200’C (400’F)

2 – Chop your vegetables and try to make them as similar in size as you can. This will ensure even cooking time.

3 – Drizzle your vegetables with ghee and sprinkle with coriander seeds, oregano and thyme along with salt and pepper and toss to coat.

4 – Spread seasoned vegetables evenly onto a baking sheet lined with baking/parchment (or your trusty old silpat baking mat) and roast for approx 20 mins  (depending on size you cut your veg) stirring midway through, until they are fragrant, golden, soft and deeeeelicious.

5 – Serve in a big ol’ bowl sprinkled with a little feta. Or with some quinoa, brown rice or along side your fave chicken/fish/meat dish. The possibilities are endless!
