How come vacation time goes so much faster than regular time?!
So not fair!
I shouldn’t complain really should I?! Especially considering I just had an absolutely incredible 2 weeks in my all time fave city with my beautiful family.
Blessed doesn’t even begin to describe how I feel.

Also feeling slightly dazed and a little confused and not entire sure where I am or what I’m suppose to be doing . . . Ah I love jet-lag, said no-one ever!
The best way to recover from the dreaded jet-lag is to get straight back into it, business as usual right?!
Right!
Although proceed with caution, we all know how clumsy and accident prone I am and as hungry as I am, I’m not really sure the kitchen is the safest place for this foggy headed lady to be – enter the slow cooker (aka crock pot/).
Oh how I love my slow cooker – what a wonderful little, time/life-saving piece of equipment it is!
It’s time to bust out your beloved slow cooker people because today we are making ourselves some all natural, quick and easy, hearty. healthy, light, fresh, seriously delicious Mexican spiced, chickpea lettuce wraps.
Oh you guys are going to love, love, love these babies!
Not only are they super quick and easy to prepare made with just a handful of ingredients that I bet you have on hand already and our beloved slow cooker is doing all the work for us remember but, they also pack a serious flavor punch!
Buttery chickpeas, sweet carrots, rich tomatoes and Mexican spices – yes, yes, just yes!
You could totally serve with some cauli-rice, quinoa or brown rice for a heartier meal but you know I love, love, love my a lettuce wraps!
Pile your sweet and spicy chickpeas into a cool crisp lettuce leaf, throw on some creamy, dreamy avocado, add a dollop of Greek yogurt or coconut cream then finish things off with some fresh tomato, a sprinkling of coriander a some extra chili.
All natural, quick and easy, light, fresh, hearty, healthy, Mexican spiced chickpea lettuce wraps – You’re head may very well explode from all the deliciousness!
Make them. Eat them. Love, love, love them.
Mexican Spiced {Slow Cooker} Chickpea Lettuce Wraps
Makes approx 4-6 servings of All natural, quick and easy, light, fresh, hearty, healthy, Mexican spiced chickpea lettuce wrapsIngredients –
1 onion, finely chopped
3 large carrots, sliced into 1/2 inch rounds
1 can diced tomatoes
1 can chickpeas (garbanzo beans), drained and rinsed
1/2 cup chicken stock (can substitute with vegetable stock if you prefer)
3 cloves garlic, minced
1 Tablespoon of Mexican seasoning
1 teaspoon of cornflour
Optional but recommended for serving –
1 head of baby cos lettuce
Avocado
Baby tomatoes
Fresh chilli
Coriander (cilantro)
Greek yogurt (or coconut cream)
Method –
1 – Place all ingredients in your slow cooker and cook on low for 6-8 hours or high 4-6 hours.
2 – To serve spoon your spicy chickpeas into a lettuce leaf or two, top with fresh tomato, chili and avocado, dollop a little yoghurt (or coconut cream) ad finish with a sprinkling of fresh coriander/cilantro.
