Rolling into Christmas week with THE most delicious, seriously festive and ridiculously simple snack which of course I had to share with you because yummy snacks are great & all but imo they’re 10 x more enjoyable when shared with a friend (FYI – thats you, boo) !

Super simple, IN-sanely delicious with a touch of holiday magic in every bite!

These sugar free, sugar cookie protein bites = the sneaky snack you never knew you always needed! The perfect way to help fuel your last minute Christmas shopping, late night gift wrapping or just to have on hand for when unexpected (or expected!!) company drops in but also did I mention the yum?!

Can you even with the texture?!!

They’re subtly sweet, deliciously buttery . . .  honestly, I don’t know what more to tell you . . .  it’s secretly healthy cookie dough with an added boost of protein and no risk of salmonella (which would be the last thing anyone would want, ever but especially not 3 days before Christmas)!!!!

Gluten free – Dairy free – Grain Free – Sugar free – Low Carb – Paleo – Keto – 100% Vegan friendly! But, most importantly, they really are edible awesomeness personified & you need them in your life because, yum & fun & snacks are life!!!!!!

Sugar Cookie Protein Bites

  • Prep Time: 10 mins
  • Difficulty: Easy

  • Ingredients
  • 1/2 C (60g)  almond flour
  • 1 tbsp (30g)  almond butter
  • 3 tbsp (90g) cashew butter
  • 1 tbsp maple syrup (20g) – or sticky sweetener of choice (I use sugar free) – more or less to taste)
  • 1 tsp (5g) monk fruit sweetener – opt for those (like meee) who want an extra touch/ level of sweetness
  • 1 tsp vanilla
  • 2 Tbsp (20g) vanilla sugar cookie (or vanilla buttercream almond protein
  • a  pinch of flakey sea salt
  • a splash of water – as needed – go easy, start with 1/4 tsp at a time – just enough to bring it together to form a dough
  • 1-2 Tbsp white chocolate
  • SPRINKLESSSSSSSSSS – measure with your heart
  1. Instructions
  2. Place all ingredients except for your sprinkles into a small bowl and stir to combine then set aside.
  3. Scoop and roll your into desired shape and size.Set aside
  4. Drizzle w melted chocolate
  5. finish w some festive sprinkles
  6. Enjoy xo

Notes –

* These blissful bites of deliciousness are best kept in the fridge & should keep well in an air tight container for 1-2 weeks (but I doubt they will last that long because , yum! ) or you can freeze for up to 3 months.

** I love Macro Mike plant based almond protein powder (have not tested any other kind/brand in this recipe). Its gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible. Its hands down without question the smoothest, most delicious, elite tasting protein power (plant based/dairy free or otherwise!!) I have ever tried. And I have tried A LOT!
