Ok friends, Im going to keep this short and sweet for you today because;

 

My head is spinning trying to process all the ever growing covid case numbers (my heart is heavy for all those sick and suffering and honestly, I don’t really know what to say) and my arm is still hurting! Having a labral tear deep in your shoulder is no joke! 18 months in and I am over it in a big way! By the time I’ve made the recipe, taken some photos and typed up the recipe . . . (or even just a simple task like washing and drying my hair . . . ) I’m well and truly done for the day.

But you guys, these brownies = 100% worth it!

Also, who wants to listen to (or read) my ramblings when there are super fudgy, dark chocolate, “notella” brownies to be made!

Also, there are moments in life when words are simply not required and I strongly believe that this may be one of them!

It’s brownie meets nutella meets dark chocolate fudge and I am here for it!

But I should warn you, they’re not for the faint of heart. They are subtly sweet, SERIOUSLY CHOCOLATY, uber fudgy not sure I can pull that off but it’s there now so . . . moving on . . . a dark chocolate lovers dream!

They literally taste like dark chocolate version of nutella (made into fudge!) and I am hooked!

If you do one thing today (or at least add it to tomorrows to-do list), please let it be making these brownies!

And don’t even get me started on that “optional” (but not really) dark chocolate frosting . . .

It’s so not necessary but like adding sprinkles,  it kind of totally is . . .

It’s basically a healthified, sugar-free, cheats dark chocolate ganache and I kind of want to slather it over my entire life!

I mean, can you even . . .

Gluten Free – Dairy free – Grain free – Refined sugar free –  Low Carb – Paleo –  Keto – Vegan friendly.

Hear me when I say, you neeeeeeeeeeed in on this!

1 bowl + 3ish ingredients and 15 minutes!

The only thing that’s left to decide is which piece to eat first?!

  • Cook Time: 1 hour
  • Persons: 4-9
  • Difficulty: Easy

  • Ingredients
  • For the brownies;
  • 1/2 cup chocolate almond or hazelnut butter (or nut/seed butter of choice)
  • 1/2 cup almond meal
  • 2 Tablespoons of cacao
  • Tbsp monk fruit sweetener – I ❤️ golden it gives them a hint of caramel (like reg brown sugar!!) & it’s 👌🏻
  • 1 Tablespoon of chocolate protein powder – or extra cacao
  • 1 teaspoon of instant espresso – I use decaf
  • A pinch of salt
  • A splash of almond milk (or milk of choice) – just enough to bring it together to form a dough. Less is more!
  • For the frosting;
  • 1/3 C coconut (or regular ) cream
  • 1/2 cup dark chocolate
  • 1 Tbsp choc hazelnut (or cashew or almond) butter
  • 1/2-1 teaspoon instant coffee
  • A pinch of salt
  1. Instructions
  2. Mix brownies
  3. Press into a lined baking dish (I used 5 x 5) or mini loaf pan
  4. Pop in the freezer to 5-10 mins to chill / “set”
  5. While your brownies are chilling & setting prepare your frosting –
  6. Add the chopped chocolate, nut butter and espresso pwd (if using) into a bowl.
  7. Heat the cream in a saucepan over low heat just until bubbles appear around the edges and is warm.
  8. Pour the cream over the chocolate and let it sit for 30 seconds, then stir continuously until it’s smooth. Let it cool slightly until it thickens and is spreadable without dripping.
  9. Slather brownies
  10. Sprinkle with sprinkles, if you want
  11. Slice
  12. Devour
  13. Enjoy xo
