Salted Caramel Bliss Bars . . . it’s caramel slice (aka – millionaire shortbread) , but not as you know it!
Deliciously buttery , crisp and crunchy cinnamon spiked shortbread topped with a creamy, dreamy, layer of salted (date free) almond butter caramel finished with a decadent and rich, cool, crisp layer of espresso infused dark chocolate!!!!
OOooOOOOo yes!
I’m pretty sure if food could be a spirit animal, this would be mine!
You know how much I love my dark chocolate and nut butter, only as I live and breathe!
And don’t even get me started on my love/need for coffee -in the words of the great Lorelai Gilmore – “I can’t stop drinking the coffee. If I stop drinking the coffee, I stop doing the standing and the walking and the words putting into the sentence doing.” Preach sister!
Just a few weeks ago we were talking about my new found and every growing obsession with cookies . They just complete me.
You and I can both agree that life’s just better when it’s dusted with cinnamon and drizzled with chocolate!
Those things are good for the soul, am I right?!
And let me tell you, these deliciously simple, secretly healthy salted caramel bliss bars speak to my soul on the deepest of levels.
Honestly, I don’t even know where to begin with the love I have for this tasty little treat.
The fact that my sweet family so kindly shared their nasty cold/flu with me so my head is all congested and super foggy but one thing that’s crystal clear is that these salted caramel bliss bars are next level!
They’re everything I love in life all served up in one delicious slice!
You could say they are kind of like a healthier, grown up version of good ol’ fashion caramel slice.
I know we’ve made a raw (date free) salted caramel slice before and yes, it’s amazing but this here is something else!
It’s a lot closer to the real deal – I want to say it’s kind of like twix but not because;
1 – copyright and
2 – It’s way better in my opinion because almond butter and espresso!!!!
FYI – the espresso is totally optional. If you’re not a coffee lover like me then tell me why we’re friends again?! Just kidding, kinda – no really – I’m kidding. More for me. Love you ♥ . . . feel free to leave it out , we can’t have you missing out on this deliciousness but, I personally love that little extra umph it brings.
With or without the espresso one taste and you’ll see, this right here is the stuff that dreams are made of.

Aptly named because they truly are blissfully delicious!
Lightly salted almond butter caramel, cinnamon spiked shortbread, espresso infused dark chocolate – sounds (and looks) like bliss to me!
It’s super simple to put together, I know it may look like a lot of steps, more than I would normally ask you to do but hear me when I say you can absolutely do this! If clumsy ol’ me can pull it off then trust me, you can too!
The hardest part about making this recipe is having the patience to wait for it to set. Let me tell you, the struggle is real friends but also, 100% worth it.
Simply – mix – bake – pour – chill – melt – chill – sprinkle – devour!
And devour you shall!

Date Free Salted Caramel Bliss Bars (Twix Bar Copycat)
- Time: 40 mins
- Persons: 4-9
- Difficulty: Easy
- Ingredients
- For the shortbread base –
- 1/4 cup almond meal/flour
- 1/4 cup coconut flour
- 1 1/2 Tablespoons of coconut oil, melted
- 1 Tablespoon of maple syrup
- 1 pinch of ground cinnamon
- 1 pinch of salt
- For the salted caramel almond butter filling –
- 1/2 cup almond butter
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1 teaspoon of vanilla
- A generous pinch of salt
- For the chocolate topping –
- 1/4 cup (1/2 a block) of good quality dark chocolate
- 1 pk decaf mocha before you speak coffee – you can sub 1/4-1/2 teaspoon of instant espresso but BYS is boosted w/ Ashwagandha, Camu Camu, magnesium, valerian root, zinc & it’s truly magical! You can use EMS10 to get 10% off if you want to give it a try.
- 1 teaspoon of coconut oil
- A pinch of salt + extra for serving
- Instructions
- Preheat oven to 175’C/350’F
- Line a small rimmed baking dish or loaf pan (I used a 5 x 5 inch square baking dish) with non-stick parchment paper and set aside.
- Place all ingredients for the base into a small bowl and stir until well combined.
- Press shortbread base in to your prepare baking dish (or loaf pan) and press down into one nice smooth even layer.
- Bake for 8-10 minutes until it’s lightly golden.
- Set aside to cool.
- Place all ingredients for your almond butter caramel in to a small sauce pan, stir and gently heat until well combined.
- Set aside to cool.
- Once your almond butter caramel has cooled, pour over your shortbread base and smooth in to a nice, even layer.
- Place in the fridge (or freezer) to set. This can take anywhere from 20 minutes in the freezer or 1-3 hours in the fridge – I like to just leave mine overnight.
- Once set, melt together chocolate, coconut oil, espresso (if using) and salt by your preferred method. Allow to cool for a minute or two then pour over your caramel-shortbread smoothing to the edges.
Place back in to the fridge to set for 5-10 minutes then slice, sprinkle with sea salt and devour!

Hi, would this recipe work with just gluten free flour? I do not have almond or coconut flour on hand.

Hi Lauren,
I haven’t tested it with any other flours but if you wanted to try I would do 1/3 C (total) and see how the mix is. It should look like a shortbread / cookie dough consistency.
