Less than a week until Christmas people!
Are you ready?
I can say with 100% certainty that I am not!
I mean I am totally ready to celebrate, eat all of the yummy food and, get give a bunch of presents . . . although I still have a few odds and ends to get.

Me? I’m a wrap on Christmas Eve kinda gal. I just love to sit in front of our big beautiful tree with all those pretty lights watching the carols wrapping gifts until some ridiculous hour.
Why is it that no matter how closely you monitor your purchases they seem to multiply into some insanely large and never ending pile when it comes time to wrap? You always end the massive marathon wrapping session, exhausted saying “next year I’m going to dial down the whole gift buying thing”. And when I say you I mean me obvs
I mean it, every. Single. Time. Year after year?!
And you know what, I wouldn’t have it any other way. I just love it.

Making little homemade treats to give to friends and family.
Every year I make our fave fruit mince pies, these homemade peanut butter cups, some kind of granola or another , this heavenly, simple homemade holiday spiced body scrub and well sweet invisible internet friend of mine this year there will be a few new kids on the block.
The first new addiction addition to my christmas line up is this killer, smooth and creamy clean eating chocolate peanut butter fudge.
Yes you read that right, clean eating fudge!
I don’t usually care much for fudge because well one bite and I tend to feel like my teeth are going to fall out from all of the sugary sweetness.
Not that I have anything against an extra special indulgence or super sweet sugary treat every now and than. I am all for that as long as it something you enjoy. Straight up store bought fudge . . . I don’t usually enjoy it so I don’t waste my time. If I am going to have an extra special little indulgence I want to make sure it’s worth it you know?
But this . . . perfectly smooth peanut butter chocolate fudge – it’s not overly sweet and literally just melts in your mouth.
I die!
I have all the time in the world for this fudge.
Made simply with a handful of ingredients you probably have on hand – Dark chocolate, peanut butter, vanilla, coconut cream and a little coconut oil. That’s it. No additional or refined sugars added, just good, good stuff.
And it comes together in 5 mins! We simply melt our dark chocolate, peanut butter and vanilla together before stirring through some coconut cream then we just pour that delicious glossy fudge mixture into a loaf pan, pop that baby into the freezer to set, slice your fudge into delicious little bite size pieces and boom ready to inhale devour enjoy.
It could not be simpler.
The most difficult part about making this fudge is when you pop it into your freezer . . . well waiting for it to set I mean, not physically putting the fudge into your freezer although . . . finding a space for it in there can prove challenging, anyone else in desperate need of a bigger (or second/additional) freezer?!
Not only is it just in time for Christmas, but it also came on the day that I discovered that not only is the air conditioning in my apartment broken, my washing machine . . . also broken oh and my car windscreen . . . yep broken! I mean are you kidding me?! And please excuse my manky cut up thumb . . . clearly I was having a rough, rough day! Don’t even get me started on how many times I kicked my toe!!!!!!!!

This recipe could not have come at a better time, mama needed a little something special and well we all know swirls get the girls, especially when they are of the peanut butter chocolate variety!
This clean eating chocolate peanut butter fudge is the prefect little treat to give to yourself friends and family this Christmas. Or just while up a batch to have on have for those times when unexpected guests pop in for a cup of tea/coffee/hot chocolate and a catch up which we all know happens this time of year so why not be prepared right?!
Smooth and creamy clean eating chocolate peanut butter fudge . . . I mean is there anything more I need to say?

Dark Chocolate Peanut Butter Fudge Bites
Makes approx 9 sweet little, peanut butter packed fudgey little bites of deliciousnessIngredients –
1/4 cup peanut butter – smooth or chunky whichever you prefer (Powdered peanut butter works too) or nut/seed butter of choice
plus extra to swirl and decorate the top if you like me are into that kinda thing 😉1 Tablespoon of coconut oil
1/2 cup (approx 80 grams) dark chocolate
1/2 cup coconut cream
1 teaspoon of vanilla
pinch of salt flakes
Optional add-ins ;
1 teaspoon of maca – for hormone balance
1-2 scoops of Vital proteins unflavored collagen peptides optional for an extra boost of protein and gut healing goodness – omit if vegan (or sub marine collage if pescatarian)
1 scp protein powder – for extra protein – I use Proganics Vanilla whey – you can use EMS10 to get 10% offMethod –
1 – Line a 9×13 inch loaf pan with baking/parchment paper and set aside.
2 – Place your peanut butter, salt flakes coconut oil, vanilla and chocolate chips into a small saucepan over medium/low heat and stir until deliciously melted and well combined.
3 – Remove from the heat and add your coconut cream stirring until well combined.
4 – Pour the creamy, dreamy, chocolate and peanut buttery goodness into your prepared loaf pan then drizzle over the additional peanut butter and use a toothpick to make a pretty swirly pattern
5 – Pop your fudge into the freezer until set
6 – Remove your ridge from the loaf pan and slice into delicious little bite size pieces. Store in the freezer in an airtight container.

Question of the day –
Saw this on Foodgawker and was immediately curious! I have a major thing for peanut butter and chocolate and fudge, well, fudge would qualify as one of my weaknesses 😉 I’ve not tried cream cheese in fudge, but it sounds incredible! Like cheesecake fudge … thanks for sharing, this is a fantastic fudge recipe!
Oh no, TOOOTTALLLY not ready for Christmas. I feel like I was on such a good preperation roll, and now I just don’t have any more motivation to finish my list LOL. But I could totally finish off a tray of these bad boys.

Although this recipe looks delicious, I was a little disappointed when I finally got to the ingredients. If you follow the basics of “clean eating” that means no refined sugars or white flour, and unprocessed or minimally processed foods. I’m afraid the semi sweet baking chips, cream cheese, and regular old peanut butter would definitely take this recipe out of the “clean” category. You may want to do more research before you make such claims.
Oh yes you’re right Leah these are certainly not a health food although compared to most other fudge recipes they sure are a lot healthier/”cleaner” than most other recipes out there.
I will be more careful with my wording in future.
